How's this for a magnificent, meat-free entrée? The maitake mushroom is serendipitously steak-size, and looks regal atop the Japanese sweet-potato-and-leek mash. Drizzled with soy sauce and lime and roasted at high heat, the maitake's texture concentrates to near-porterhouse perfection.

1/4 cup reduced-sodium soy sauce
1 teaspoon grated lime zest, plus 2 tablespoons fresh juice
1/4 cup vegetable oil, plus more for drizzling
Kosher salt and freshly ground pepper
4 clusters (each 3.5 ounces) maitake mushrooms (aka hen-of-the-woods)
1 recipe Japanese Sweets-and-Leeks Mash
Rice seasoning (furikake), for serving

Steps:

  • Preheat oven to 400°F. In a bowl, whisk together soy sauce and lime zest and juice. Slowly whisk in oil; season with salt and pepper.
  • Lightly drizzle oil onto a rimmed baking sheet. Trim bottom ends of mushroom clusters so they stand upright; transfer to sheet in a single layer, trimmed-sides down, at least 2 inches apart. Drizzle evenly with half of soy mixture; season with salt and pepper.
  • Roast until darkened slightly and tender but still holding their shape, 22 to 25 minutes. Serve mushrooms over mash, drizzled with remaining soy-lime dressing and sprinkled with rice seasoning.

3 sweet potatoes, cubed
1 sweet onion, chopped
1 sweet apple, chopped
1 clove garlic, minced
1 tablespoon ground cinnamon
¼ teaspoon ground chipotle pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).

6 medium beets, peeled and cut into chunks
2 ½ tablespoons olive oil, divided
1 teaspoon garlic powder
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 teaspoon sugar
3 medium sweet potatoes, cut into chunks
1 large sweet onion, chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a bowl, toss the beets with 1/2 tablespoon olive oil to coat. Spread in a single layer on a baking sheet.
  • Mix the remaining 2 tablespoons olive oil, garlic powder, salt, pepper, and sugar in a large resealable plastic bag. Place the sweet potatoes and onion in the bag. Seal bag, and shake to coat vegetables with the oil mixture.
