Tips:

  • Choose ripe tomatoes: Use ripe, juicy tomatoes for the best flavor. Roma tomatoes are a good choice because they have fewer seeds and a meaty texture.
  • Roast the tomatoes: Roasting the tomatoes concentrates their flavor and gives them a slightly smoky taste.
  • Use fresh pineapple: Fresh pineapple is best for this recipe, but you can use canned pineapple in a pinch. If using canned pineapple, be sure to drain it well.
  • Add a little heat: If you like your salsa with a little kick, add a jalapeño or serrano pepper to the mix. Remove the seeds and ribs of the pepper before adding it to the salsa, if desired.
  • Make it ahead: Both the salsa and the dipping sauce can be made ahead of time. The salsa will keep in the refrigerator for up to a week, and the dipping sauce will keep for up to 2 weeks.

These two recipes are perfect for any party or gathering. TheRoasted Tomato Salsa is a classic Mexican dish that is always a crowd-pleaser, while the Sweet Pineapple Cream Dipping Sauce is a unique and flavorful twist on a classic.
