Steps:

  • For the vegetable and chicken quinoa bowls: Preheat the oven to 400 degrees F. In a large bowl, toss together the broccoli, squash, carrots and zucchini along with the garlic powder, 3 tablespoons olive oil, 1 teaspoon salt and 1/2 teaspoon black pepper. Pour the vegetables onto a large baking sheet, making sure they're in an even layer. Bake until the vegetables are softened and have a nice brown color to them, about 30 minutes.

1/2 cup reserved vinaigrette from Honey-Mustard Salmon with Green Beans
2 zucchini or summer squash, cut into 1/2-inch half-moons
1 pint cherry tomatoes
1 large Yukon Gold potato, cut into 1-inch pieces
2 tablespoons olive oil

5 ounces baby spinach (5 cups)

3 tablespoons mayonnaise (optional)
1 small head of garlic
1 small beet
6 tablespoons olive oil
1 small sweet potato, cut into 1/2-inch pieces
1 small parsnip, cut into 1/2-inch pieces
1 tablespoon coarse salt
1/2 teaspoons freshly ground black pepper
1 small zucchini, cut into 1/4-inch-thick half-moons
1 small yellow bell pepper, cut into 1-inch pieces
1 small red bell pepper, cut into 1-inch pieces
4 ounces green beans, cut into 1-inch lengths
1 Granny Smith apple, cored and cut into 1/2-inch pieces
2 tablespoons unsalted butter
1 small Vidalia onion, cut into 1/8-inch half moons
4 wraps or flour tortillas

  • Heat oven to 450 degrees. In a small bowl, combine the shredded chicken and mayonnaise, if using, and set aside. Drizzle the head of garlic and beet with 1 tablespoon olive oil for each, and wrap each separately in foil. Place in the oven to cook until tender, 45 to 60 minutes. Remove from oven, and let cool. When cool enough to handle, peel beet, and cut into 1/2-inch pieces; set aside. Squeeze garlic from skins; set aside.
  • Place the sweet potato, parsnip, 3 tablespoons olive oil, 2 teaspoons salt, and 1/4 teaspoon pepper in a medium bowl, and toss to combine. Place the mixture in a large roasting pan in the oven, and roast, turning vegetables as necessary, until vegetables are starting to soften, 15 to 20 minutes.
  • Meanwhile place zucchini, yellow pepper, red pepper, beans, apple, 1 tablespoon olive oil, 1 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl, and toss to combine. Add to the partly roasted vegetables, and continue to roast until vegetables are tender, about 15 minutes more. Remove from oven, and set aside to cool to room temperature.
  • Melt the butter in a medium skillet set over medium-low heat. Add the Vidalia onion, and cook, stirring occasionally, until the onion is very soft, about 10 minutes. Remove from heat, and set aside.
  • Spread a quarter of the reserved roasted garlic on the center of each wrap. Divide the chicken, reserved beet, and roasted vegetables among the four wraps. Sprinkle each with a quarter of the cheese. Roll each wrap tightly in waxed or parchment paper, and slice in half before serving.

8-10 spears asparagus

2 shallots
2 garlic cloves
Seasonings:
1-2 T olive oil, 1 t salt, freshly ground pepper, 1/2 t dried rosemary leaves.
First Cheese Mixture (aka CM1):
1 c ricotta cheese (can use fat free if desired)
1 c whole milk
1 c shredded mozzarella cheese
2 Tbsp Parmesan cheese
1 egg
1/2 tsp salt.
Meat:
½ pound ground skinless chicken breast
2 Tbsp. olive oil
Sauce:
3 c Bertolli tomato-based pasta sauce (your choice)
Second Cheese Mixture (aka CM2):
1 c mozzarella cheese
1/3 c Parmesan cheese
Pasta:
1 package oven-ready lasagna noodles

Steps:

  • Dice the vegetables (about 3/4 inch) and mix with seasonings. Roast in a large shallow roasting pan at 450 degrees F. for 25 - 30 minutes stirring frequently. Mixture will be dry and just beginning to brown. Meanwhile, saute chicken in olive oil until cooked through. Combine CM1 ingredients and chill in the fridge until needed. Combine CM2 in a small bowl and set aside until needed. Lightly grease a 9x13 pan. Spread 1/3 c pasta sauce over bottom of dish. Lay oven-ready lasagna noodles on bottom and dot with ½ CM1. Spread with ½ the vegetable mixture and then ½ chicken. Pour 1 c pasta sauce over the chicken. Top the sauce with a second layer of pasta. Dot with the remaining CM1 and cover with the remaining vegetables, then chicken and 1 c pasta sauce. Top the sauce with a final layer of pasta and the remaining spaghetti sauce. Sprinkle with CM2. Cover with lightly greased foil and place in a preheated 375 degree F. oven. Bake for 30 minutes or until bubbling. Remove foil and bake uncovered another 15 minutes until golden. Remove from oven, let stand 15 minutes and cut into squares.

  • Heat oven to 450°F. Toss asparagus, bell pepper, onion, mushrooms, oil, lemon-pepper seasoning and salt until vegetables are coated. Spread in ungreased jelly roll pan, 15 1/2x10 1/2x1 inch. Roast about 20 minutes or until vegetables are crisp-tender. Cool slightly. Coarsely chop vegetables.

2 c roasted chicken, chunked
1 large onion, diced
3 medium carrots, peeled and diced
2 celery stalks, diced
1 lb mushrooms, sliced
4-5 sprig(s) fresh thyme
2 Tbsp chicken fat
3 Tbsp butter, unsalted
4 oz cream cheese, room temperature
2 c milk
3 c chicken stock
1 bay leaf
kosher salt and freshly ground black pepper to taste

Steps:

  • 1. Preheat oven to 400-degree. Heat two large baking sheets in the oven with 1 tablespoon chicken fat on each one. Spread the sliced mushrooms on one in an even layer ( don't add salt until they are cooked). Spread the onion, carrot and celery in an even layer on the other one. Season with salt, pepper and thyme. Roast vegetables until golden brown and liquid has evaporated from mushrooms - about 35 minutes. Give the vegetables a stir once or twice during cooking.
  • 2. In a large pot melt the butter over medium heat. Add the flour and cook for about a minute. Whisk in cream cheese, milk, chicken drippings and chicken stock. Add the cooked vegetables, roasted chicken, bay leaf, salt and pepper. Simmer over low heat for 30 minutes, stirring often.
  • 3. This recipe is a great way to use leftover roasted chicken. To save time, I roast the vegetables at the same time I roast the chicken. The next day, the soup comes together fairly quickly.
