INA GARTEN'S ROASTED VEGETABLE TORTE (BAREFOOT CONTESSA)

Ina Garten's Roasted Vegetable Torte (Barefoot Contessa) image

Make it ahead of time and then cut it into wedges, like a cake. The layers of roasted vegetables look so beautiful. One adaptation that I do, is put a whole layer of goat cheese in the center - its wonderful. Another thing I've done is to make a light basil vinaigrette to drizzle over each serving. Either of these things (or both) really put this dish over the top!!

Tips:

  • Use a variety of vegetables to add flavor and color to your strata. Some good options include broccoli, zucchini, bell peppers, onions, and mushrooms.
  • Don't overcook the vegetables. They should be tender but still slightly firm.
  • Use a good quality bread for the strata. A sturdy bread, such as French bread or sourdough, will hold up well and absorb the egg mixture.
  • Grate the cheese yourself for the best flavor. Pre-shredded cheese often contains additives that can affect the taste and texture of your strata.
  • Bake the strata until it is set in the center and the top is golden brown.

Conclusion:

Roasted Vegetable Strata is a delicious and easy-to-make breakfast, lunch, or dinner dish. It is perfect for using up leftover vegetables and can be easily customized to your liking. With its simple ingredients and straightforward instructions, this recipe is sure to become a family favorite.
