Pepper
1 large carrot, peeled and halved, and sliced into 1/2 inch wide slices.
1 beet, rinsed and sliced into 1/2 inch wide pieces
1 small eggplant, qtred and sliced int 1/2'
1 large zucchini, halved and sliced into 1/2'
1 large portobello, stemmed and sliced into 1/2'
1 dozen white mushrooms qtred
1 spanish onion, wedged.

Steps:

  • Preheat oven to 400 in a large bowl, toss the carrot with 1 tbls of the OO and sprinkle with some S&P Arrange the carrots on the large baking sheet and roast on the bottom rack for 5 mins. Toss the beets w/ 1 tbls of OO and sprinkle with S&P. Arrange the beets on a seperate baking sheet, sprinkle with some water, and roast on the bottom rack for 15-20 mins, until caramelized, flipping 1 or 2 times to prevent from burning Toss the remaining vegetable w/ the remaining 2 tbls of OO and sprinkle w/ S&P. Addthis mixture to the baking sheet with the softened carrots. Roast all of these vegetables together for 10-15 mins, until caramelized, flipping 1-2 times to prevent from burning.

1 yellow bell pepper, cut into 1/2-inch-wide strips

1 eggplant, peeled and diced
8 carrots, diced
16 cherry tomatoes
2 red onions, sliced
1 red bell pepper, sliced

½ cup olive oil
1 teaspoon dried rosemary
1 teaspoon dried thyme
2 bay leaves, crushed
1 teaspoon dried oregano
2 cloves garlic, minced
2 tablespoons fresh lemon juice

Steps:

6 carrots, peeled and cut into thirds

1/2 cup soy sauce
2 teaspoons prepared mustard (I like Heinz)
1 teaspoon garlic salt
2 tablespoons malt vinegar (or balsamic vinegar)
1 teaspoon dried sweet basil leaves
1 teaspoon chicken bouillon powder, tomato flavored (look in Mexican aisle at grocery)
1 tablespoon honey
2 tablespoons extra virgin olive oil

Steps:

  • Blend all ingredients except for the vegetables in a large mixing bowl to make the marinade. Pour in the vegetables and stir them around so that they get initially coated with marinade.
  • Marinate the vegetables in the refrigerator for about 2 hours, stirring once or twice.
  • Place the vegetables, with all the marinade, in an 9" x 13" (or larger) casserole dish, cover with aluminum foil, and bake on the middle rack in a pre-heated oven at 375-degrees F. for 45 minutes.
