- Combine the vinegars and remaining ingredients in a small bowl and toss with the hot, cooked vegetables. Sprinkle with parsley.
Tips:
- Choose the right vegetables: Root vegetables like carrots, parsnips, and turnips are all great choices for this recipe. They should be firm and have no blemishes.
- Cut the vegetables evenly: This will help them cook evenly. If you are using a variety of vegetables, cut them into similar-sized pieces.
- Use a good quality balsamic glaze: This is the key ingredient in this recipe, so make sure to use a good one. You can find balsamic glaze at most grocery stores.
- Don't overcrowd the pan: When roasting the vegetables, make sure to spread them out in a single layer. This will help them cook evenly and prevent them from steaming.
- Roast the vegetables until they are tender: This will usually take about 20-30 minutes. You can check to see if they are done by piercing them with a fork. They should be tender but still have a little bit of bite to them.
- Serve the vegetables immediately: These vegetables are best served hot or warm. You can garnish them with fresh herbs like parsley or thyme.
