Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 10

3 ounces Roquefort cheese or 3 ounces blue cheese
6 ounces cream cheese or 6 ounces cottage cheese
2 tablespoons softened butter
3 tablespoons whipping cream
2 eggs
salt
white pepper
cayenne pepper
1/2 tablespoon minced fresh chives or 1/2 teaspoon minced green onion top
8 inches pastry shells, partly cooked

Steps:

  • To partly bake the pastry shell:
  • Bake in middle of oven at 400 degrees F. for 8-9 minutes.
  • For the filling:.
  • Preheat oven to 375 degrees F. Place oven rack in upper third of oven.
  • Beat cheese, butter and cream with a fork, then beat in the eggs.
  • Force the mixture through a sieve, to get rid of the lumps.
  • Season to taste and stir in the chives or green onion tops.
  • Pour into pastry shell.
  • Bake 25-30 minutes or til puffed and browned.

Tips:

  • Use high-quality ingredients. The better the ingredients, the better the quiche will be. Use fresh eggs, heavy cream, and real Roquefort or blue cheese. If you can, use homemade pie crust instead of store-bought.
  • Don't overmix the batter. Overmixing will make the quiche tough. Mix the batter just until the ingredients are combined.
  • Bake the quiche until it is set. The quiche is done when the center is no longer jiggly. A toothpick inserted into the center should come out clean.
  • Let the quiche cool before serving. This will help the quiche to set and make it easier to slice.
  • Serve the quiche warm or at room temperature. Quiche can be served for breakfast, lunch, or dinner. It is also a great dish to make ahead of time and reheat later.

Conclusion:

Roquefort or blue cheese quiche is a delicious and versatile dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. Whether you are a fan of Roquefort or blue cheese, you are sure to enjoy this quiche.
