1/2 cup plus 2 tablespoons olive oil
1/3 cup red wine vinegar
4 Rosemary sprigs, plus 1 tablespoon minced fresh rosemary
1 tablespoon packed light brown sugar
Four 1/2-inch-thick boneless pork chops
Salt and freshly ground black pepper
All-purpose flour, for dredging

Steps:

  • 1. Combine 1/2 cup of the olive oil, the vinegar, rosemary sprigs, garlic, and brown sugar in a large zip-top bag. Add the pork chops to the marinade and seal. Massage the chops in the bag to coat them well. Refrigerate for at least 2 hours to marinate.
  • 2. Remove the pork chops from the marinade and pat them dry. (Discard the marinade.) Let the pork chops come to room temperature for 15 minutes. Season with salt and pepper on both sides, then dredge them in flour.

2 1 1/2-inch-thick bone-in pork loin chops (about 1 1/2 pounds total)
3/4 teaspoon kosher salt, more for seasoning pork
1/2 teaspoon freshly ground black pepper, more for seasoning pork
2 tablespoons extra virgin olive oil
1 red onion, halved and thinly sliced
3 large rosemary sprigs
2 garlic cloves, minced
2 pounds plum tomatoes (preferably a mix of red and yellow), roughly chopped
6 anchovy fillets
Polenta, noodles or rice, for serving (optional)

Steps:

  • Preheat oven to 350 degrees. Rinse pork chops and pat dry with a paper towel. Season generously with salt and pepper. In a large, ovenproof skillet over medium-high heat, place 1 tablespoon oil. Sear chops until well browned, 3 to 4 minutes a side. Transfer to a plate.

8 1-by-3-inch strips orange zest
16 whole black peppercorns

4 bone-in pork rib chops (each about 12 ounces and 1 inch thick)

Flat-leaf parsley sprigs, for serving

  • Combine sugar, salt, bay leaves, orange zest, peppercorns, rosemary, and 4 cups water in a medium saucepan. Bring to a boil, stirring until sugar and salt are dissolved. 1 tablespoon vegetable oil
6 garlic cloves, sliced thin

1 tablespoon sunflower oil
1 1/4 cups chicken broth
2 ounces butter
2 garlic cloves, minced

2 lbs potatoes, peeled and thinly sliced
1 onion, halved and very thinly sliced
4 tomatoes, skinned and thinly sliced

Steps:

  • Preheat the oven to 400°F Season the chops on both sides with some salt and pepper. Heat the oil in a large frying pan, add the chops and fry over a medium heat for 1-2 minutes on each side until nicely browned. Set aside on a plate.
  • For the potaotes: Put the chicken broth, butter, garlic, rosemary leaves, 1/2 tsp salt and some fresh ground black pepper into a pan and bring up to a gentle simmer.
  • Add the potatoes and onion and cook gently for 5-10 minutes, or until just tender when pierced with the tip of a knife but not falling apart. This will depend on your potatoes.
  • Spoon half the potatoes and onions over the base of a lightly buttered 4 pint shallow ovenproof dish and cover with the sliced tomatoes and a little seasoning.
  • Spoon the remaining potatoes and onions on top, season lightly and bake in the oven for 40 minutes.
  • Overlap the pork chops on top of the potatoes and return them to the oven for a further 20-25 minutes, until the potatoes are tender and the chops are cooked through.

An unbelievably easy and succulent main dish that can be made in one pan. You can substitute the sherry with port wine, if desired. The sauce can also be served as an aromatic gravy over potatoes.

⅓ cup all-purpose flour
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried parsley
salt and pepper to taste
4 tablespoons vegetable oil
4 (3/4 inch) thick pork chops
½ cup chicken broth
2 tablespoons dry sherry
1 teaspoon chopped fresh rosemary
1 onion, thinly sliced

Steps:

  • In a small bowl, combine the flour, garlic powder, onion powder, parsley and salt and pepper to taste. Mix well and dredge each pork chop in the mixture, patting lightly to evenly coat each chop.
  • Heat the oil in a large skillet over medium high heat. Saute the chops in the oil for 4 to 5 minutes per side, or until well browned. Then add the chicken broth, sherry and the rosemary to taste. Spread the sliced onion over the chops, reduce heat to low, cover and simmer for 10 minutes.
  • Flip the chops, allowing the onion slices to drop down into the liquid. Re-cover, and simmer for 5 more minutes, or until pork reaches an internal temperature of 145 degrees F (63 degrees C). Season with salt and pepper to taste.

4 large boneless pork chops (5 ounces each)
1 teaspoon fresh rosemary, minced
2 tablespoons all-purpose flour
2 tablespoons olive oil
2 cloves garlic, sliced
1 cup canned low sodium chicken broth
1/4 cup dry white wine
1/3 cup whipping cream
4 teaspoons raspberry vinegar or 4 teaspoons red wine vinegar

Steps:

  • Sprinkle pork on both sides with 3/4 teaspoon rosemary, salt and pepper.
  • Coat with flour and shake off excess.
  • Heat oil in heavy large skillet over medium-high heat.
  • Add garlic and saute until it begins to color, about 2 minutes.
  • Using slotted spoon, discard garlic.
  • Add pork to skillet and saute until brown and cooked through, about 7 minutes per side.
  • Using tongs, transfer pork to plate.
  • Tent with foil to keep warm.
  • Add chicken broth, white wine, whipping cream, vinegar and remaining 1/4 teaspoon rosemary to skillet.
  • Boil until sauce thickens enough to coat back of spoon, stirring often, about 10 minutes.
  • Season to taste with salt and pepper.
  • Pour any collected pork juiced from plate into skillet.
  • Spoon sauce over pork and serve.
