1 cup 2% milk
3 teaspoons vanilla extract
1 cup all-purpose flour

ICING:
2 cups confectioners' sugar
1 teaspoon vanilla extract
1 to 3 tablespoons water

Steps:

  • In a small bowl, beat eggs and sugar; stir in milk and vanilla. Combine flour and salt; gradually add to batter until smooth., Heat 2-1/2 in. of oil to 375° in a deep-fat fryer or electric skillet. Place rosette iron in hot oil, then dip in batter, three-fourths up the sides of iron (do not let batter run over top of iron). Immediately place in hot oil; loosen rosette with fork and remove iron. , Fry rosettes, a few at a time, until golden brown, 1-2 minutes on each side. Remove to paper towel-lined wire racks. Repeat with remaining batter. , For icing, combine the confectioners' sugar, vanilla and enough water to achieve a dipping consistency. Dip edges of rosettes into icing; let dry on wire racks.

2 tablespoons granulated sugar
1 teaspoon salt
2 eggs
2 tablespoons vegetable oil
1 cup water or milk
1 cup Gold Medal™ all-purpose flour
Vegetable oil
Powdered sugar, if desired
1/2 cup semisweet chocolate chips
2 tablespoons butter or margarine
2 tablespoons corn syrup

Steps:

  • In deep medium bowl, beat granulated sugar, the salt and eggs with electric mixer on medium speed. Beat in 2 tablespoons oil, the water and flour until smooth. In 3-quart saucepan, heat oil (2 to 3 inches) to 400°F.
  • Heat rosette iron by placing in hot oil 1 minute. Tap excess oil from iron on paper towels. Dip hot iron into batter just to top edge (don't go over top). Fry about 30 seconds or until golden brown. Immediately remove rosette; invert onto paper towels to cool. (If rosette is not crisp, batter is too thick; stir in a small amount of water or milk.)
  • Heat iron in hot oil and tap on paper towels before making each rosette. (If iron is not hot enough, batter will not stick.) Sprinkle with powdered sugar just before serving or drizzle with chocolate glaze.
  • To make chocolate glaze, in 2-cup microwavable measuring cup, place chocolate chips, butter and corn syrup. Microwave uncovered on Medium 1 to 2 minutes or until chocolate can be stirred smooth. Drizzle glaze over rosettes.

Rosettes are traditional Swedish cookies. Light and crispy, they are favorites of young and old. Rosettes are unusual in that they are fried. You will need a rosette iron, which is available in many stores (Target is one) and online. The irons come in many shapes, but the rosette is traditional. I didn't list quantities for oil and powdered sugar as more will be required than will actually become part of the rosettes. They will be around 30 calories each (before sugaring). Allowing the batter to rest creates thinner, crisper cookies. Preparation time includes resting time.

1 cup milk
1 tablespoon sugar
1/4 teaspoon salt
1 cup sifted flour
flavorless oil (canola)

Steps:

  • Have ready: a jelly roll pan lined with several layers of paper toweling; powdered sugar in a shaker or sieve.
  • Whisk eggs, milk, sugar and salt together. Sprinkle in flour a little at a time. Beat until smooth. Let batter sit for 30 minutes.
  • Heat 3 - 4" of oil in a small, deep pan to 365°F.
  • Stir batter.
  • Heat rosette iron by submerging in hot oil for 10 seconds.
  • Lift out, shake off excess oil and dip immediately into batter just so the top edge of the iron is even with the surface of the batter. If you dip it too far, the rosette won't come off the iron.
  • Plunge the coated iron into the hot oil. Don't let the iron touch the sides or bottom of the pan.
  • As soon as the batter puffs, gently pull the iron out. The rosette should slip back into the oil.
  • When lightly browned, carefully lift out with a fork or slotted spoon and place on paper toweling to drain.
  • Reheat iron and proceed with remaining batter. You'll have to work very quickly. The frying only takes a few seconds.
  • Don't be tempted to fry more than two at a time. It will cool the oil too much and you'll get flabby, greasy rosettes. The oil should not go below 355°F.
  • After you've fried a few, dust them with powdered sugar.

1 1/2 qt vegetable oil

  • Whisk together eggs, granulated sugar, milk, and vanilla in a large bowl, then add flour and salt, whisking, until just combined (do not overmix, or cookies will blister).
  • Heat oil in a 3- to 4-quart heavy saucepan with rosette iron in it until thermometer registers 370 to 375°F. Carefully lift out iron, letting oil drip off into pan. Dip all but top edge of iron into batter 3 seconds, then submerge iron in oil and fry (batter adhering to iron) until golden, 35 to 40 seconds (do not let go of iron; cookie will shatter if it hits bottom of saucepan). Lift out iron, letting oil drip off, and, working over paper towels, carefully pry off rosette with a fork. Let rosette drain, hollow side down, on paper towels, then make more rosettes in same manner, heating iron in oil 10 seconds before dipping it into batter each time.
  • Dust rosettes with confectioners sugar before serving.

I've been making these for years. They are delicate and delicious. I've never counted how many this recipe makes, but it does make quite a few. Cook time is aproximate......each rosette should be cooked for 3 minutes or until lightly browned.

2 teaspoons sugar
1/4 teaspoon salt
1 cup milk
1 cup flour
1 tablespoon lemon extract

Steps:

  • Add sugar to slightly beaten eggs, then add milk.
  • Sift flour before measuring, then together with salt.
  • Stir into first mixture until batter is smooth and about the consistency of heavy cream.
  • Add flavoring.
  • Heat fat or oil to 370°F in a deep kettle.
  • If you do not have a thermometer, put a small piece of bread into fat and count to sixty.
  • Bread should brown.
  • Dip your iron into hot fat to heat it and drain excess fat on absorbent paper.
  • Dip heated iron into batter to about 3/4 its height.
  • If iron is properly heated and drained the batter will coat the iron.
  • If batter does not adhere the iron is too cool or greasy.
  • Plunge batter-coated iron quickly into the hot fat and cook from two to three minutes or until active bubbling ceases.
  • Invert iron over fat to drain fat off, then remove rosette from iron onto absorbent paper, inverting rosette to drain completely.
  • Your rosette should be crisp as soon as it is slightly cool.
  • If it is not, your fat may be too cool.
  • If rosette does not drop off form easily, rap the form sharply with a knife handle to jar it loose.
  • While still warm, sprinkle with confectioners sugar.
  • Crevices may also be filled with raspberry jam (or your favorite) prior to coating with the sugar.

1 vanilla bean, split lengthwise
3 tablespoons granulated sugar
1/2 teaspoon coarse salt
1/2 teaspoon ground cardamom
1 1/2 cups all-purpose flour
2 large eggs, lightly beaten
2 quarts canola oil
Confectioners' sugar, for sprinkling

Steps:

  • Pour milk into a small bowl, and add seeds scraped from vanilla bean. Whisk to combine. In a medium bowl, combine sugar, salt, cardamom, and flour. Add eggs and milk. Whisk until smooth and thick. Chill for at least 30 minutes.
  • Heat oil in a 4-quart saucepan over medium-high heat until a deep-frying thermometer registers 375 degrees.
  • Attach rosette iron to handle. Carefully dip iron into oil for 2 to 3 minutes. Blot with paper towel. (It is very helpful to reheat rosette iron before dipping into batter.)
  • Dip hot iron into batter up to the top edge; do not allow batter to coat the top. Submerge iron in oil to bottom of pot for 15 seconds. Raise iron from bottom of pot, but keep submerged, and continue cooking until lightly browned. Remove iron from oil, and gently remove rosette, using a fork if necessary. If rosette pops off of the iron and falls into the oil, use tongs to retrieve it.
  • Drain rosettes on paper towels. Sprinkle with confectioners' sugar before serving.

200 ml milk
200 ml all-purpose flour
sugar, for coating

Steps:

  • Mix egg yolk, 2 tablespoons of sugar, milk and flour together to form a smooth batter.
  • Place the rosette iron in the oil and heat oil to 180 C; remove iron.
  • Dip the hot iron into batter and hold it over the hot oil for a moment so that the batter firms up a bit.
  • Fry the rosette in the hot oil until golden brown, approximately 1 minute.
  • Push the rosette from the iron with a fork and drain on paper towel.
  • Heat the iron in the oil again before making the next rosette.
  • Dip the cooled rosettes in granulated sugar.

1 c milk

  • 1. Gather the rosette irons,you want to use. Combine eggs, sugar, and salt, beat well. Add remaining ingredients, beat till smooth.
  • 2. Heat rosette iron in deep hot oil (350-375) for two minutes. Drain excess oil from iron; dip into batter to 1/4 inch from the top,then immediately into hot oil. fry rosette till golden, 10-30 seconds. Lift out, tip upside down to drain oil back into pan.
  • 3. If the rosette did not drop off iron when frying...use a fork to push off iron onto a rack over paper towels. Reheat iron again in the oil..make another rosette Stir batter from time to time as you will get a little oil in it.
  • 4. Sprinkle rosettes with powdered sugar when dry and cool. Put in a pretty bowl and cover with saran wrap. Till ready to serve your guests. The pretty green bowl was made by my sister(Ellyn),and her husband(NORM) and was given to me as a Christmas present(filled with rosettes)about 1965. They had a plastic factory and this was one of there first items they produced.

3 russet potatoes, peeled and finely diced
1 onion, chopped
2 cups vegetable broth
6 tablespoons mascarpone cheese

4 (1 ounce) slices thinly sliced smoked salmon (gravlax)
2 tablespoons mascarpone cheese
1 tablespoon chopped fresh chives

Steps:

  • Melt butter in a saucepan over low heat, and cook and stir the potatoes and onion until the onion starts to become translucent, about 3 minutes. Raise heat to medium, pour in the vegetable broth, and bring to a boil. Reduce heat to a simmer, cover, and cook until the potatoes are tender, 10 to 15 minutes. Pour the mixture into a large bowl, and puree through a food mill back into the saucepan. (Discard any fibrous vegetables left in the food mill.)
  • Bring the pureed soup back to a simmer over medium-low heat, and whisk in 6 tablespoons of mascarpone. Season with salt, pepper, and lemon juice to taste.
  • Preheat oven to 200 degrees F (95 degrees C), and warm 4 oven-safe soup plates for about 5 minutes.
  • Roll a slice of smoked salmon loosely into a rose shape, pinching the roll at the bottom and fanning the roll out at the top. Place a rosette of salmon into the bottom of each warmed soup plate, gently pour the soup over the rosette, and drizzle each bowl with about 1/2 tablespoon of mascarpone cheese. Sprinkle with chives, and serve.

2 Tbsp sugar
1/3 tsp salt
1 1/2 c flour
1 1/2 c whole milk
2 tsp vanilla (or rum)
OIL FOR FRYING
peanut oil or your favorite vegetable oil

1 Tbsp cinnamon
1 c sugar

1 c powdered sugar

2 - 4 jar(s) colored sugar sprinkles

Steps:

  • 1. Beat eggs with the vanilla, salt and sugar. Add flour and milk alternately, mixing until smooth and same thickness as pancake batter. If it isn't thick enough, add more flour, a tablespoon at a time. If it is too thick, add a teaspoon of milk at a time.
  • 2. Over high heat, bring 4 - 5 inches of oil in a sauce pan to 365 degrees. (Use a deep frying thermometer if you have one, or just try to fry and adjust heat as you go). Put the rosette iron in the hot oil for 1 - 2 minutes, the iron has to be hot.
  • 3. Quickly dip the hot iron into the batter (about halfway), DO NOT let the batter go over the top of the iron, the rosette will be stuck on the iron because it will fry over the top. Dip and hold the coated iron into the hot oil and fry 20-35 seconds until light golden brown. Slip onto a paper towel to drain oil and cool a little bit.
  • 4. In a shallow bowl, combine the cinnamon and sugar, mix together evenly. Dip rosettes in sugar mixture while still warm, or sprinkle or sift it on. You can also sprinkle them with colored sugar sprinkles or powdered sugar. Rosettes aren't sweet until they are sprinkled with sugar!
  • 5. *** you can double the recipe, but I usually prefer to take a break between batches, so I make fresh batter each time. *** Store in airtight containers (zipper bags can be used, but won't protect the cookies as they are very fragile!).
