KARDEA'S REUBENS

Kardea's Reubens image

Just like a Rueben you'd find at a restaurant, my recipe has my own version of Thousand Island or Russian dressing, rye bread, Swiss cheese and sauerkraut. What I do differently is saute some onion with the sauerkraut. I love the extra sweetness and crunch it adds to the sandwiches, and I know you will too.

Provided by Kardea Brown

Categories     main-dish

Time 55m

Yield 6 servings

Number Of Ingredients 19

1 cup mayonnaise
1/3 cup ketchup
3 tablespoons dill pickle relish
2 tablespoons sriracha
1 tablespoon Miss Brown's House Seasoning, recipe follows
2 teaspoons Worcestershire sauce
7 tablespoons unsalted butter
1 tablespoon olive oil
1 large onion, sliced (about 2 cups)
Kosher salt
2 1/4 cups drained sauerkraut
12 slices rye sandwich bread
12 slices Swiss cheese
2 1/4 pounds thinly sliced corned beef
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • For the Sea Island dressing: Combine the mayonnaise, ketchup, relish, sriracha, House Seasoning and Worcestershire sauce in a small bowl. Set aside.
  • For the Reubens: Melt 1 tablespoon butter with the oil in a large skillet over medium-high heat. Add the onion and sprinkle with a little salt. Cook until the onion begins to soften, about 5 minutes. Stir in the sauerkraut and cook until the mixture begins to brown, about 5 more minutes. Remove the onion and sauerkraut from the skillet to a medium bowl, and set aside. Wipe out the skillet, if necessary, for cooking the sandwiches.
  • Spread some Sea Island dressing on each of 6 slices of bread, then top each with 1 slice of the cheese, some corned beef, fried sauerkraut and onions and another slice of cheese. Top each with the remaining slices of bread.
  • Melt 3 tablespoons butter in the same skillet. Add three sandwiches. Cook until each side is golden and crispy, 3 to 4 minutes per side. Repeat with the remaining butter and sandwiches.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

REUBEN EGG ROLLS RECIPE BY TASTY

Reuben Egg Rolls Recipe by Tasty image

We're trading rye bread for egg roll wrappers in this fun spin on a classic American deli sandwich. Corned beef, Swiss cheese, and sauerkraut are layered, wrapped, and fried to crispy perfection. Served with homemade Russian dressing, you've got yourself the ultimate appetizer.

Provided by Betsy Carter

Time 58m

Yield 8 egg rolls

Number Of Ingredients 18

8 square egg roll wrappers
8 slices swiss cheese, cut into ½-inch (1.24 cm) rectangles
12 oz corned beef, thinly sliced
12 tablespoons sauerkraut
1 teaspoon caraway seed
1 large egg
1 tablespoon water
peanut oil, for frying
kosher salt, to taste
½ cup mayonnaise
¼ cup white onion, finely diced
1 clove garlic, minced
¼ cup sriracha
1 tablespoon prepared horseradish
2 teaspoons worcestershire sauce
½ teaspoon hot sauce
¼ teaspoon paprika
½ teaspoon kosher salt

Steps:

  • Make the egg rolls: Place an egg roll wrapper on a clean surface oriented like a diamond. Lay 5 cheese rectangles (about ½ a slice) in the center of the wrapper, then top with 1½ ounces of corned beef, 1½ tablespoons of sauerkraut, ⅛ teaspoon caraway seeds, and another 5 cheese rectangles.
  • In a small bowl, whisk together the egg and water. Brush the edges of the wrapper with the egg wash. Fold the bottom of the wrapper up and over the filling, then fold in the sides and roll to seal. Repeat with the remaining ingredients to make 8 egg rolls total.
  • Fill a medium pot halfway with oil and heat over medium-high heat until the temperature reaches 375°F (190°C). Set a wire rack over a baking sheet.
  • While the oil is heating, make the Russian dressing: In a medium bowl, stir together the mayonnaise, onion, garlic, Sriracha, horseradish, Worcestershire sauce, hot sauce, paprika, and salt. Refrigerate until ready to serve.
  • Fry the egg rolls, 2-3 at a time, in the hot oil for 2-3 minutes, flipping occasionally to brown evenly. Transfer to the wire rack and season immediately with salt.
  • Serve the egg rolls hot with the Russian dressing for dipping.
  • Enjoy!

TOP-RATED REUBEN SANDWICH

Top-Rated Reuben Sandwich image

The Reuben is the epitome of the great deli sandwiches... every ingredient is important as well as how it's prepared. This is how we make our own Reuben, and we've been told it's the best in the Northwest. It takes making your own ingredients in several cases, but we certainly feel it's worth the trip, as have our fans.

Provided by Rare Affaire

Categories     Lunch/Snacks

Time 20m

Yield 1 serving(s)

Number Of Ingredients 6

2 slices rye bread (Our personal favorite is dill rye.)
2 slices swiss cheese (It depends on the maker, and doesn't necessarily need to be expensive or imported.)
4 ounces corned beef, pre-heated (Get the best you can... which in our opinion is Incredible Corned Beef)
1 ounce sauerkraut, drained (We like AB's version of homemade sauerkraut.)
1 tablespoon Russian salad dressing (The original was Russian, but we like Louie Dressing (For Seafood Salads or Reuben Sandwiches))
2 tablespoons butter, softened

Steps:

  • Preheat your grill to about 325 degrees F. (That's just about medium for many burners, but it also depends on if your stove is gas, electric, glass-topped, or a number of other factors -- experimenting is the surest way to find out.).
  • Spread outside of each slice of rye with soft butter, about 1 Tbls per side (Scrape it thin -- too much butter makes browning more difficult and reduces crispness.).
  • Place bread on grill butter side down, and put 1 slice Swiss on each side.
  • Pre-heat the corned beef on a very low setting in the microwave or heat it briefly on the grill, but DON'T OVERCOOK! You want to heat, not dry out. Layer the corned beef on 1 side.
  • Heat sauerkraut on grill, but do not brown. When it steams, it's ready.
  • When cheese melts, remove sandwich from heat.
  • Spread Louie Dressing onto side with cheese only. (This stops it from soaking into the warm bread and making it soggy.).
  • Put sauerkraut onto corned beef & roughly make an even layer.
  • Close sandwich, salt if you like (we do) and cut as desired. (We served it with a homemade dill pickle spear and a bit of salad.).
  • Serve it hot!

REUBEN SANDWICH

Reuben Sandwich image

Like many classic dishes, the Reuben sandwich has multiple origin stories: Some accounts trace its origins to the since-shuttered Reuben's delicatessen in New York City, where Arthur Reuben created a special for one of Charlie Chaplin's leading ladies in 1914, using ham, turkey, Swiss cheese and coleslaw on rye. Another origin story points to a customer, Reuben Kulakofsky, who was said to have ordered a corned beef and sauerkraut sandwich at Blackstone Hotel, in Omaha, where Bernard Schimmel obliged by rounding it out with Thousand Island dressing, Swiss cheese, rye bread and a hot grill. Today's Reuben sandwiches feature corned beef, sauerkraut, Swiss cheese and a healthy smear of Russian dressing between toasted, buttered rye. Homemade dressing has a brighter, fresher flavor than the bottled variety, and comes together in just a few turns of a whisk. To achieve the prized crispy crust and gooey cheese, keep the heat low enough to allow the buttered bread to toast while the cheese melts.

Time 30m

Yield 4 sandwiches

Number Of Ingredients 11

1/2 cup mayonnaise
5 tablespoons ketchup
3 tablespoons dill pickle relish (not sweet)
1 tablespoon minced onion
1 teaspoon yellow mustard
1 teaspoon Worcestershire sauce
8 slices rye sandwich bread
4 tablespoons unsalted butter, at room temperature
1 pound thinly sliced corned beef
1 cup drained sauerkraut (about 6 ounces)
8 slices Swiss cheese (about 6 ounces)

Steps:

  • Make the Russian dressing: In a small bowl, combine all ingredients and mix well.
  • Make the sandwiches: Spread one side of each bread slice with 1/2 tablespoon butter. In a large nonstick skillet, arrange 2 slices of bread, buttered side down, over medium-low heat. Spread 2 tablespoons of Russian dressing on each slice of bread, then top each with 1/4 pound corned beef, 1/4 cup sauerkraut and 2 slices cheese. Top each with 1 slice of bread, buttered side up. Cook until golden and crispy underneath, about 5 minutes. Flip the sandwiches and cook, pressing down gently with a spatula, until second side is golden and cheese melts, about 3 minutes more. Transfer sandwiches to plates and wipe out skillet. Repeat with the remaining bread, sauce, corned beef, sauerkraut and cheese. Serve warm.

Tips:

  • Use high-quality ingredients: The quality of your ingredients will greatly impact the taste of your Reuben sandwich. Use fresh, high-quality rye bread, thinly sliced corned beef, Swiss cheese, and sauerkraut. You can also add other toppings, such as Russian dressing, thousand island dressing, or coleslaw.
  • Slice the bread and corned beef thinly: This will help the sandwich to cook evenly and prevent the bread from becoming soggy. The thinner the slices, the better. Try to slice the bread and corned beef about 1/8 inch thick.
  • Butter the bread: This will help to prevent the bread from sticking to the pan and will also add a delicious flavor. You can use unsalted butter or margarine.
  • Cook the sandwich in a hot pan: This will help to create a crispy crust on the bread and melt the cheese quickly. Heat your pan over medium-high heat before adding the sandwich.
  • Flip the sandwich frequently: This will help to ensure that the sandwich cooks evenly. Flip the sandwich every 2-3 minutes, or until the bread is golden brown and the cheese is melted.
  • Serve the sandwich immediately: The Reuben sandwich is best served hot and fresh. You can serve it with a side of potato chips, coleslaw, or pickles.
