Steps:
- Preheat oven to 350° F (180°C).
- Cut the stems off of each of the mushrooms and finely chop them, setting the mushroom caps aside for later.
- Heat the oil in a pan over high heat. Cook the chopped stems with the garlic, salt, and pepper for about six to eight minutes, constantly stirring. Be careful not to burn the garlic. Remove from heat.
- In a medium bowl, combine cooked stems, cream cheese, breadcrumbs, half of the parmesan, parsley, salt, and pepper, mixing until evenly combined. The mixture should be extremely thick.
- Space out the mushroom caps evenly on a baking sheet, upside down. Spoon a generous amount of the cream cheese mixture on top of each mushroom.
- Top each mushroom with a sprinkle of parmesan cheese. Bake for 20 minutes.
- Garnish with a sprinkle of parsley, then serve!
- Enjoy!

I have made these a few times. I cut the oil down quite a bit and substitute chicken or beef broth. The recipe can be doubled or tripled.

STUFFED MUSHROOMS
These fun hors d'oeuvres turn humble mushrooms into rich, savory bites with the flavors of escargots, the classic French delicacy of snails cooked in garlic butter. Here, fragrant and buttery bread crumbs infused with garlic, shallots and parsley fill mushroom caps. The roasted cremini mushrooms emerge from the oven juicy, with a garlicky topping that's golden and crispy. Make use of your trimmings: The mushroom stems can be frozen for later use in vegetable or chicken stock.

Tips:
- Choose the right mushrooms. Button mushrooms are the most common type used for stuffing, but you can also use cremini or portobello mushrooms. Just make sure they are all about the same size so they cook evenly.
- Clean the mushrooms thoroughly. Use a damp paper towel to wipe away any dirt or debris from the mushrooms. Don't rinse them under water, as this can make them soggy.
- Remove the stems. Use a sharp knife to carefully remove the stems from the mushrooms. You can save the stems to use in other recipes, such as soups or stir-fries.
- Stuff the mushrooms. Fill the mushroom caps with your desired stuffing. You can use a variety of ingredients, such as bread crumbs, sausage, cheese, vegetables, or herbs.
- Bake the mushrooms. Place the stuffed mushrooms on a baking sheet and bake them in a preheated oven until they are cooked through. The cooking time will vary depending on the type of mushrooms and stuffing you are using.
- Serve the mushrooms immediately. Stuffed mushrooms are best served hot and fresh out of the oven. You can garnish them with parsley or chives for a pop of color.
Conclusion:
Stuffed mushrooms are a delicious and versatile appetizer or side dish that can be enjoyed by people of all ages. They are easy to make and can be tailored to your own personal taste. With a little creativity, you can create a variety of delicious stuffed mushroom recipes that will impress your friends and family.
