2/3 cup packed light brown sugar
1 teaspoon ground cinnamon

5 tablespoons unsalted butter, at room temperature
1 stick unsalted butter, at room temperature, plus more for the pan
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 cup sour cream
2/3 cup strawberry jam
3/4 cup confectioners' sugar
2 tablespoons dark rum

Steps:

1/2 cup finely chopped walnuts
5 tablespoons butter or margarine, melted

1 cup raisins
1/3 cup dark rum
4 packages (8 oz each) cream cheese, softened
1 1/2 cups granulated sugar
4 eggs
1 cup sour cream
1 cup whipping cream
2 tablespoons powdered sugar
1/2 cup sour cream
1 tablespoon dark rum

Steps:

  • Heat oven to 350°F. Spray 9-inch springform pan with cooking spray. Mix crust ingredients. Press in bottom of pan. Bake 10 minutes. Cool 10 minutes. Reduce oven temperature to 325°F.
  • In saucepan, bring raisins and 1/3 cup rum to simmer. Remove from heat; let stand 20 minutes. Drain.
