CAVIAR SANDWICH

Caviar Sandwich image

I now prefer the caviar sandwich to all other more classic presentations at the holidays. All that caviar crammed into a sandwich makes me feel giddy and extravagant and very lucky to be alive the second I set eyes on it. Context is everything; what I could reasonably splurge for would feel forlorn if showcased on a proper silver trolley atop a mound of shaved ice with a mother-of-pearl spoon at the ready on its nearby velvet pillow, but here, by contrast, in the context of a lowly sandwich, it feels as decadent as if I were eating caviar straight out of the tin, like a midnight pint of ice cream. Buy the caviar you most prefer from a retailer you trust the most-the most expensive may by no means necessarily be your favorite-- and see if this luscious sandwich doesn't make you feel pretty giddy, too.

Time 30m

Yield 2 to 4 servings

Number Of Ingredients 9

1/2 cup crème fraîche
3 scallions, thinly slivered on the bias, about 4 tablespoons
1/4 teaspoon ground black pepper
1/2 teaspoon kosher salt
3 eggs
8 slices white sandwich bread, preferably Pepperidge Farm "Very Thin"
2 to 3 tablespoons soft butter
2 ounces caviar
2 tablespoons chives, minced

Steps:

  • In a small bowl, mix the crème fraîche, scallions, black pepper and kosher salt. Stir aggressively with a rubber spatula until the ingredients are fully incorporated and the crème fraîche is smooth and spreadable. Set aside.
  • Bring a small pot of water to boil over medium-high heat. Carefully lower your eggs into the boiling water using a slotted spoon, taking care not to crack the shells. Cook the eggs for 7 minutes, adjusting heat as needed to maintain a gentle boil. Remove eggs to a bowl of ice water, and cool completely. Gently crack eggs all over, peel and roughly chop. Set aside.
  • Toast white bread until light golden brown. Remove from toaster, and butter each slice, as we say, wall to wall.
  • Repeat with the scallion crème fraîche so that both halves of each sandwich have an even schmear.
  • Spread an even layer of chopped egg on 4 slices (of the total of 8 slices) of toast.
  • Evenly dot the caviar on top of the chopped egg.
  • Sprinkle chives on top of the caviar.
  • Place the remaining 4 slices of crème-fraîche toast on top of the egg-caviar side. Press down very gently, and slice in half on the bias. Serve at once.

RUSSIAN DRESSING

Russian Dressing image

Russian dressing and Thousand Island are similar in that they are both creamy and salmon in color. However, Russian salad dressing is spicier with the addition of ingredients like horseradish and pepper sauce, while pickle relish gives Thousand Island a sweeter flavor. -Francine Lizotte, Surrey, British Columbia

Categories     appetizer

Time 30m

Yield 6 - 8 servings

Number Of Ingredients 10

1 1/2 cups milk
1 package granular yeast
1 1/2 cups unbleached white flour
1/2 cup buckwheat flour
1/2 teaspoon salt
1 teaspoon sugar
4 eggs, separated
1/4 pound unsalted butter, melted
6 ounces red caviar
2 cups sour cream

Steps:

  • Scald the milk and set aside.
  • Dissolve the yeast in one-fourth cup warm water.
  • Sift the white flour into a bowl, add the buckwheat flour, salt and sugar.
  • Beat the egg yolks until thick. When the milk has cooled to lukewarm, add the yolks and three tablespoons of the melted butter. Add the yeast. Mix well and pour into the flour. Mix thoroughly, removing any lumps. Set aside in a warm place lightly covered with a towel for about two hours, or until doubled in bulk.
  • Whip the egg whites until they stand in stiff peaks and fold them into the batter.
  • Lightly butter a small frying pan. Pour in just enough of the pancake mixture to coat the bottom of the pan. When the mixture begins to bubble, turn the pancake over and cook lightly on the other side. Wrap the pancakes in a napkin and keep them warm in the oven while you cook the others. Serve in a pile, wrapped in a napkin.
  • Serve the caviar, the sour cream and the remaining melted butter in small bowls on the table. Each person puts a pancake on a plate, butters it, adds sour cream and caviar, and rolls it like a crepe.

Tips for Making the Best Russian Caviar Sandwiches:

  • Use high-quality ingredients: The better the quality of your ingredients, the better your sandwiches will be. Look for fresh, flavorful bread, creamy butter, and high-quality caviar.
  • Don't skimp on the butter: Butter is what helps to bind the sandwich together and adds a delicious richness. Be generous with the butter, but not so much that it overwhelms the other flavors.
  • Toast the bread: Toasting the bread gives it a nice crunch and helps it to stand up to the other ingredients. If you don't have a toaster, you can also grill or pan-fry the bread.
  • Use a variety of toppings: In addition to caviar, there are many other delicious toppings that you can add to your sandwiches. Some popular options include hard-boiled eggs, red onion, chopped chives, and capers.
  • Serve immediately: Russian caviar sandwiches are best served immediately after they are made. The bread will start to get soggy if you wait too long.
