RUSSIAN ROCKS

Posted by request, this was my grandmother's recipe, handwritten on yellow lined note paper and dated "1972" along w/ a notation: "Easy to make." My grandmother was born in 1890 in Chichester, England, and moved to the US in the early 1900s. She was a very special lady, beloved of all her grandchildren. Recipe is exactly as written by my grandmother with no changes. Prep time and amount are estimates.

MOM'S RAISIN ROCK COOKIES

Mom's Raisin Rock Cookies image

This was my mom's favorite cookie recipe. In fact, I don't remember her making any other cookies (besides chocolate chip). I think the "rocks" are the walnuts. I'm totally guessing at the "time to make" and number of cookies it makes because I bake cookies even less frequently than Mom did. Please feel free to correct

Tips:

  • Choose the right potatoes: Yukon Gold or Russet potatoes are best for this recipe because they hold their shape well and have a fluffy texture.
  • Cut the potatoes evenly: This will help them cook evenly.
  • Soak the potatoes in cold water: This will help to remove excess starch and prevent them from sticking together.
  • Season the potatoes generously: Use a combination of salt, pepper, and garlic powder to flavor the potatoes.
  • Cook the potatoes in hot oil: This will help them to brown and crisp on the outside while remaining fluffy on the inside.
  • Don't overcrowd the pan: Cook the potatoes in batches if necessary to prevent them from steaming instead of frying.
  • Serve the potatoes hot: Russian rocks are best enjoyed fresh out of the fryer.

Conclusion:

Russian rocks are a delicious and easy-to-make side dish that can be enjoyed by people of all ages. They are perfect for parties or potlucks, and they can also be served as a snack. With a few simple ingredients and a little bit of time, you can make this classic dish at home.
