Stir in spinach, remove from heat, and add to pasta. Mix in cottage cheese, buttermilk, dill, black pepper and half the cheddar. Spread in prepared pan, sprinkle with remaining cheddar and sunflower seeds. Bake uncovered for 20-30 minutes.
