"This easy recipe was inspired by a trip to Puerto Rico, where they served yellow rice and flavorful seafood dishes," writes Stephanie Howard from Oakland, California. "I combined them to create this lovely dish for two."

SAFFRON ARROZ CON CAMARONES (SAFFRON RICE WITH SHRIMP)
This is another Cuban recipe I picked up. It is outstanding. You can go with regular white rice here, but breakdown and buy the Valencia rice online if you don't have it locally. It holds more liquid and gives your meal a more authentic look

This is wonderful for a summertime (or any season) luncheon. Double or even triple the recipe to serve your guests. This should be made a few hours in advance and chilled to blend flavors. Steps:
- In a saucepan, combine broth, 2 cups water, lemon zest, 1 1/4 teaspoons salt, and 1/4 teaspoon pepper. Bring to a simmer over medium heat. Meanwhile, heat a large straight-sided skillet over medium. Swirl in 2 tablespoons oil. Add onion, season with 1/4 teaspoon salt, and cook, stirring occasionally, until soft and translucent, about 5 minutes. Add rice and cook, stirring, until translucent and grains begin to make a popping sound, 3 to 4 minutes. Stir in wine and saffron; cook until wine is mostly evaporated, about 30 seconds.
- Ladle 1 cup broth mixture into skillet. Stir with a wooden spoon at a moderate speed until most of broth is absorbed and bottom of skillet stays visible for a second or two as you mix, 2 to 3 minutes. Continue ladling broth into skillet, about 1/2 cup at a time (or enough to just cover rice). Stir slowly but constantly, allowing rice to absorb most of broth before adding more. Risotto is ready when rice is al dente and broth has thickened to a rich sauce, 20 to 25 minutes. (You may not need to use all of broth.) Add shrimp and peas to skillet with last addition of broth; cook until shrimp are opaque, 2 to 3 minutes.
- Remove from heat. Stir in butter, lemon juice, and cheese; season with salt and pepper. Drizzle with oil and sprinkle with more cheese and pepper to serve. If the risotto becomes stiff before serving, stir in more hot broth, a little at a time, until it's loose and creamy.

Steps:
- In a medium heavy skillet with 2-inch sides, warm the oil over medium heat. Add the onion and bell pepper. Cook for 6 minutes until softened, stirring often. Stir in the garlic, saffron, paprika, and salt and pepper to taste. Add broth and rice.
- Bring to a boil; reduce the heat to low; cover and simmer for 12 minutes until the rice is almost tender. Nestle the shrimp and peas in the rice, and add 1/4 cup (or more) of the broth to moisten. Cover and cook until the shrimp are just opaque in the center, about 5 minutes. Season to taste with salt and pepper. Serve.
Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make all the difference in your saffron rice shrimp salad. Look for plump, juicy shrimp, fragrant saffron, and long-grain rice.
- Cook the rice perfectly: The rice in your salad should be tender and fluffy. Rinse the rice well before cooking, and use a ratio of 1 cup of rice to 1 1/2 cups of water. Bring the water to a boil, then reduce the heat to low, cover the pot, and simmer for 18 minutes. Remove the pot from the heat and let it stand for 5 minutes before fluffing the rice with a fork.
- Don't overcook the shrimp: Shrimp cooks quickly, so it's important to not overcook it. Cook the shrimp for just a few minutes, until it's pink and opaque. Overcooked shrimp will be tough and rubbery.
- Use a flavorful dressing: The dressing in your salad is what will bring all the flavors together. Use a dressing that's tangy, flavorful, and complements the other ingredients in the salad.
- Add some fresh herbs: Fresh herbs, such as cilantro, parsley, or mint, can add a pop of color and flavor to your salad. Stir them in just before serving.
Conclusion:
Saffron rice shrimp salad is a delicious, refreshing, and healthy dish that's perfect for a summer meal. It's easy to make and can be tailored to your own tastes. Whether you like your salad tangy, mild, or somewhere in between, you're sure to find a recipe that you'll love.
