SAHLAB (MIDDLE EASTERN PUDDING)

Sahlab (Middle Eastern Pudding) image

This is a quick and easy to prepare dessert. I usually always have the ingredients on hand. There are boxed versions of this pudding, but it is traditionally prepared at home. You can add more or less cornstarch if preferred. This dessert is so versatile that it can be served warm or chilled. I love to eat it both ways, when it chills it firms up.

EGYPTIAN SAHLAB OR SAHLEP

Egyptian Sahlab or Sahlep image

The website which I got this from says this is a popular winter beverage in Egypt. Usually it's made from the starchy bulbs of a plant called orchis mascula. For those who don't get original sahlep powder, this is a recipe with cornstarch as a substitute. Feel free to use the original thing, though :)

SAHLEP, SALEP, SAHLAB

Sahlep, Salep, Sahlab image

Sahlep is a delicious creamy Turkish drink. I found sahlep powder in a Turkish shop, that I bough without knowing what it was. In the internet (http://morselsandmusings.blogspot.com/2006/08/sahlep-salep-sahlab.html) I found the explanations and this delicious ancient recipe. Sahlep, a Turkish winter drink, is made from the dried powdered roots of a mountain orchid. The powder is then heated with milk, sugar and cinnamon to make a thick dairy beverage. In modern day Turkey, sahlep is used to cure sore throats and coughs and is only served during the cold months.

Tips:

  • Use fresh milk: Fresh milk will give sahlab a richer flavor and creamier texture. If you don't have fresh milk, you can use whole milk, but it won't be as flavorful.
  • Don't boil the sahlab: Boiling the sahlab will cause it to curdle. Instead, heat it over low heat until it is just simmering.
  • Use a whisk to stir the sahlab: A whisk will help to prevent the sahlab from curdling. Stir the sahlab constantly until it has thickened.
  • Sweeten the sahlab to taste: You can sweeten the sahlab with sugar, honey, or maple syrup. Start with a small amount of sweetener and add more to taste.
  • Garnish the sahlab with nuts, cinnamon, or coconut: Garnishing the sahlab will add flavor and visual appeal. Some popular garnishes include chopped nuts, cinnamon, and coconut.

Conclusion:

Sahlab is a delicious and comforting drink that is perfect for a cold winter day. It is easy to make and can be customized to your own taste. With just a few simple ingredients, you can create a warm and flavorful beverage that will surely become a favorite.
