½ cup brown sugar
12 ounces walnut halves
½ cup apple cider vinegar
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley

½ cup walnut oil
½ cup peanut oil
10 ounces arugula leaves or spring mix

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with foil.

1/4 teaspoon Dijon mustard
1/2 teaspoon honey

1/3 cup toasted walnuts
2 teaspoons chopped fresh flat-leaf parsley
2 teaspoons thinly sliced fresh chives
4 ounces log of fresh chevre cheese (goat cheese)

1/2 cup finely julienned red onion

Steps:

  • For the vinaigrette:

1/4 cascabel chile, toasted in a dry pan, ground in a coffee grinder
1/4 cup pistachio nuts, toasted in a dry pan, ground in a grinder or food processor
1/4 cup bread crumbs (Japanese panko, if available)
1 tablespoon olive oil
Balsamic Vinaigrette, recipe follows
Hot Candied Walnuts, recipe follows
1/2 cup good olive oil
1/4 cup balsamic vinegar
2 shallots, minced
1 teaspoon finely chopped fresh thyme leaves
1 teaspoon finely chopped fresh rosemary leaves
Salt and freshly ground black pepper
1 cup shelled walnuts
1/4 cup sugar
1/4 teaspoon cayenne pepper
1/8 teaspoon salt

  • Crust the cheese with the chile, nuts, and bread crumbs and a little salt. Heat 1 tablespoon olive oil in a nonstick pan (large enough to fit all 4 disks comfortably) on medium heat. Place the crusted cheese in the pan. Heat for 45 seconds, turn with a spatula, and heat for another 45 seconds.

1/3 cup walnut pieces
1 teaspoon sea salt
8 slices baguette
1 large garlic clove, peeled and cut in half
4 ounces chevre cheese, cut into 8 slices (use the round, log shaped type)
2 ounces mesclun
1 small red onion, peeled and thinly sliced
2 tablespoons olive oil
1 tablespoon walnut oil
1 1/2 tablespoons tarragon vinegar
1 garlic clove, peeled and crushed
salt and pepper, to taste

Steps:

  • Preheat broiler to hot. Put walnuts in a bowl and cover with boiling water. Let stand 1 minute, drain and shake dry. Toast under broiler 3-4 minutes until golden (watch carefully so they don't burn). Sprinkle with sea salt, toss and cool.
