PASTA WITH SMOKED SALMON AND CAPERS

Pasta with Smoked Salmon and Capers image

Another classic combination, this dish makes people think you went to a lot of trouble. Actually it's quite simple. Any shape of pasta works, but I prefer a small noodle such as shells or bowties. Despite what an Italian might otherwise recommend, I like to serve this dish with freshly grated Parmesan cheese.

Yield Serves 4

Number Of Ingredients 10

1/4 cup extra-virgin olive oil
1 small onion, chopped
1/4 pound smoked salmon, chopped
1 cup heavy cream (a.k.a. whipping cream)
3 tablespoons capers, drained
Salt and freshly ground black pepper to taste
N/A freshly ground black pepper
1 pound pasta, cooked al dente, drained (reserving about 1/4 cup of the cooking water), and tossed with olive oil
N/A olive oil
Freshly grated imported Parmesan cheese

Steps:

  • In a large skillet, heat the olive oil over medium-high heat. Add the onion and sauté until translucent, but not browned. Add the smoked salmon and continue cooking just until the salmon turns opaque, 1 to 2 minutes. Pour in the cream and add the capers. Taste and adjust seasoning with salt and pepper. Be careful how much salt you add because the smoked salmon and capers are both salty. Add the pasta and toss to coat. If there doesn't appear to be enough sauce, add a couple of tablespoons of the pasta cooking water to thin it down. Serve with freshly grated Parmesan cheese.

EASY SMOKED SALMON PASTA

Easy Smoked Salmon Pasta image

A really quick, easy sauce for 'pasta asciutta,' which means 'dry pasta.' It's not a dish over-loaded with sauce, but one that appreciates the simple smokiness of good smoked salmon. Serve sprinkled with some Parmesan or garnished with some parsley. This is not a creamy, thick sauce. Just one that really brings out the simple, yet fantastic flavors of smoked salmon. Enjoy!

BAKED LEMON-BUTTER SALMON WITH PASTA

Baked Lemon-Butter Salmon with Pasta image

This is a super simple meal that is largely hands off. The bright lemon pairs beautifully with the tender garlicky salmon on a bed of pasta. Garnish liberally with some Parmesan cheese if desired!

Provided by Rebekah Rose Hills

Time 30m

Yield 2

Number Of Ingredients 10

salt and freshly ground black pepper to taste
1 (8 ounce) salmon fillet

  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes.

  • While the pasta is cooking, melt 1 tablespoon of the butter in 2 tablespoons of the oil in a large skillet. Season the salmon with salt and pepper, then dust with flour. Add the salmon to the skillet and cook over medium-high heat, flipping occasionally, until golden on the outside and just cooked through, about 8 minutes.
  • In the reserved pot, melt 3 tablespoons of the butter in the remaining 4 tablespoons olive oil over low heat. Return the pasta to the pot, add all but 2 tablespoons of the herbs and toss well to coat. Season with salt and pepper.
  • Transfer the salmon to a plate; tent with foil to keep warm. Add the chicken broth, lemon juice and capers to the skillet. Simmer over high heat, scraping up any browned bits from the bottom of the skillet, until the liquid is slightly thickened, 3 to 5 minutes. Remove from the heat and gradually swirl in the remaining 2 tablespoons butter until emulsified. Stir in the reserved 2 tablespoons herbs and season with salt and pepper.
  • Add the salmon to the sauce and turn to coat. Divide the pasta among plates, top with the salmon and sauce and serve right away.

SMOKED SALMON PASTA

Smoked Salmon Pasta image

This is an awesome pasta that is quick to make and very satisfying. I first copied a recipe from Bon Appetit and then combined it with several recipes from my cookbooks. Over the years I have tweeked it to the recipe it is today. I have used fresh salmon in place of smoked salmon when I have not been able to get smoked salmon, and it was very good as well. Served with a salad it makes a very lovely meal.

Tips:

  • Choose the Right Salmon: Opt for fresh or frozen salmon fillets that are firm and have a vibrant color. Avoid fillets with any signs of bruising or discoloration.
  • Properly Season the Salmon: Generously season the salmon fillets with a combination of salt, pepper, and your favorite herbs and spices. This will enhance the natural flavor of the fish.
  • Cook the Salmon Perfectly: Cook the salmon until it reaches an internal temperature of 145°F (63°C) for medium-rare or 155°F (68°C) for medium. Overcooking can dry out the fish, making it tough and less flavorful.
  • Don't Overcrowd the Pan: When cooking the salmon fillets, make sure not to overcrowd the pan. This will prevent the salmon from cooking evenly and may result in soggy or undercooked fish.
  • Use a Flavorful Cooking Medium: To add extra flavor to the salmon, consider cooking it in a flavorful cooking medium such as olive oil, butter, or a mixture of both. You can also add aromatics like garlic, shallots, or herbs to the pan for additional flavor.
  • Make a Creamy Sauce: Enhance the salmon pasta dish by making a creamy sauce using ingredients like heavy cream, cream cheese, or Alfredo sauce. This will create a rich and decadent sauce that perfectly complements the salmon and pasta.
  • Add Vegetables for Color and Nutrition: Incorporate colorful vegetables such as broccoli, asparagus, or bell peppers into your salmon pasta dish. Not only will this add color and texture, but it will also increase the nutritional value of the dish.
  • Garnish with Fresh Herbs: Before serving, garnish the salmon pasta dish with fresh herbs like parsley, basil, or chives. This will add a pop of color, freshness, and additional flavor to the dish.
