6 tablespoons mayonnaise
2 teaspoons capers, drained
2 to 3 teaspoons lemon juice
3-1/2 teaspoons Dijon mustard, divided
1/2 teaspoon pepper, divided
1/4 cup finely chopped onion
1/4 cup finely chopped celery
5 teaspoons vegetable oil, divided
2 pouches (6 ounces each) boneless skinless pink salmon
3/4 cup seasoned bread crumbs, divided
1 egg, lightly beaten

Steps:

  • In a small bowl, combine the mayonnaise, capers, lemon juice, 1/2 teaspoon mustard and 1/4 teaspoon pepper. Cover and refrigerate until serving. , In a small skillet, saute the onion and celery in 1 teaspoon oil until crisp-tender. In a bowl, combine the onion mixture, salmon, 1/2 cup bread crumbs, egg and remaining mustard and pepper. Shape into four patties; coat with remaining bread crumbs. Cover and refrigerate for 10 minutes. , In a large skillet over medium heat, cook salmon patties in remaining oil for 5 minutes on each side or until lightly browned. Serve with caper mayonnaise.

1/4 cup low-fat mayonnaise
2 tablespoons fresh curly-leaf parsley (minced)
1/2 teaspoon dried tarragon
1 tablespoon fresh lemon juice
2 tablespoons capers
16 ounces salmon fillets

Steps:

  • Mix the mayonnaise, parsley, tarragon, lemon juice and capers and chill.
  • Preheat oven to broil. Place the salmon fillets on a parchment-lined cookie sheet.
  • Place under broiler and cook for about 5 minutes.

Salmon cakes are one of my go-to emergency meals. Every once in a while I like to use fresh salmon. Salmon is one of those products, like chicken, that's very easy to get into a rut with. People generally find a few recipes that work for them, and just stay with those, but this fairly simple preparation should be easy to add to anyone's rotation. Serve with lemon wedge and remoulade sauce. You can use any bread crumbs instead of panko breadcrumbs, if desired.

¼ cup minced onion

4 cups Kellogg's® corn flakes (crushed to 1 cup) divided or 1 cup Kellogg's® corn flake crumbs (divided)
2 eggs, slightly beaten

CAPER SAUCE
1/2 cup sour cream
