1 (15 ounce) can black beans, rinsed and drained
1 Roma tomato, seeded and diced
¼ cup diced red onion
1 jalapeno pepper, seeded and minced
2 tablespoons chopped cilantro
1 ½ tablespoons lime juice
1 teaspoon salt
1 (16 ounce) tube polenta, cut into 1/2-inch rounds
2 tablespoons olive oil
salt and ground black pepper to taste

Steps:

  • Combine black beans, tomato, onion, jalapeno, cilantro, lime juice, and 1 teaspoon salt in a bowl. Stir to combine. Set aside.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.

1 cup shredded Cheddar cheese (4 oz)
1/2 cup Old El Paso™ Thick 'n Chunky salsa
1/4 cup butter or margarine, melted
1/4 cup water

Steps:

  • Heat oven to 425°F. Generously grease large cookie sheet with shortening or cooking spray. In large bowl, stir together flour and cheese. Add remaining ingredients; stir just until blended.
  • On lightly floured surface, knead dough gently just until smooth. Press or roll out dough to 12x6-inch rectangle. With sharp knife or pizza cutter, cut dough into 1-inch-wide strips; cut each strip into 2-inch pieces. With thin spatula, place strips about 1/2 inch apart on cookie sheet.

1/3 cup thick & chunky salsa
2 eggs, lightly beaten
1/2 cup shredded cheddar cheese
2 tablespoons chopped pitted ripe olives
1 tablespoon green onion, chopped
1 clove garlic, finely minced

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, beat the cream cheese until smooth.
  • Blend in salsa and eggs.
  • Stir in cheddar cheese, olives, onion and garlic.
  • Lightly spray mini muffin pan with oil, fill with mixture.
  • Bake 15- 18 minutes until centers are set.
  • Remove from oven and cool in the pan for 5 minutes.

1/2 c picante sauce or thick and chunky salsa
1/4 c all purpose flour
2 c shredded cheddar cheese
2 tsp onion powder

Steps:

  • 1. Preheat oven to 400 degrees; Grease 2 muffins pans (12 count each) set aside
  • 2. in medium bowl mix together the eggs, salsa,flour and onion powder, stir in cheese
  • 3. spoon about one Tbsp of mixture into each muffin cup
  • 4. bake for 10 minutes or until lightly golden brown.serve warm or at room temperature. pass extra sauce and or sour cream if desired
  • 5. **** I spray the muffin pans with cooking spray. Instead of onion powder you can use 2 Tsp of chili powder, add 2 Tbsp of chopped green onion, or green pepper if desired.
