  • 2. Cover and put in the fridge for at least 4 hours.
  • 3. Bake at 400 degrees until golden brown.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for salt and vinegar fries because they are starchy and have a high solids content, which makes them crispy.
  • Cut the potatoes evenly: This will help them cook evenly. Use a sharp knife to cut the potatoes into 1/2-inch thick slices, then cut the slices into 1/2-inch thick sticks.
  • Soak the potatoes in water: This will help to remove excess starch and prevent the fries from sticking together. Soak the potatoes in cold water for at least 30 minutes, or up to overnight.
  • Dry the potatoes thoroughly: Before frying the potatoes, pat them dry with a paper towel. This will help them to crisp up.
  • Use a high-quality oil: Use a vegetable oil with a high smoke point, such as canola oil or peanut oil. This will help to prevent the fries from burning.
  • Fry the potatoes in batches: Do not overcrowd the fryer or the fries will not cook evenly. Fry the potatoes in batches in a single layer.
  • Season the fries immediately after frying: While the fries are still hot, season them with salt and vinegar. This will help the seasoning to adhere to the fries.
