GRANDMA MABEL'S SALTED PEANUT CAKE

Grandma Mabel's Salted Peanut Cake image

This was my grandma's recipe. She would make it when my dad was just a little guy and he's now 68 - so it's a pretty old recipe. I haven't seen any recipe like this on JAP. It's unique and ohhhhhhh so yummy! It takes a little extra work, but believe me it's well worth it!!

1 tsp baking powder
1 c buttermilk
1 lb salted peanuts - ground
FROSTING
1/2 c all-purpose flour
1 c milk
1 c butter-softened
1 c powdered sugar
1 tsp vanilla extract

Steps:

  • 1. In a bowl, cream shortening and sugar. Add egg and beat well. Combine the 1 1/2 cups of flour, baking soda and baking powder and add to creamed mixture slowly alternating with the buttermilk. Set aside 3/4 cup of the ground peanuts for the topping. Stir remaining peanuts into batter. Spread into a greased 13X9 cake pan. Bake at 350 degrees for 40-45 minutes or until a toothpick comes out clean from the center. Cool completely before frosting.
  • 2. FROSTING DIRECTIONS- combine 1/2 cup of flour and the milk in a saucepan until smooth. Bring to a boil over medium heat stirring frequently. Cook and stir for 2 minutes or until thickened. Remove from the heat and cool completly. In a bowl cream the butter and the powdered sugar until fluffy. Add the cooled flour mixture and the vanilla and beat until fluffy -about 4 minutes. Spread over the cooled cake and sprinkle with the reserved ground peanuts.
  • 3. *NOTE* Grandma and mom always used one of those old, silver, cast iron grinders to grind the peanuts. I do it as well because I just like the way the peanuts come out. You might be able to use a food processor, but personally I have never tried it. Just like keeping some of the old traditions I guess!

Tips:

  • Mise en Place: Before you start baking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid any scrambling.
  • Measure Accurately: Use a kitchen scale to measure your ingredients by weight whenever possible. This is the most accurate way to measure and will help you achieve consistent results.
  • Use Fresh Ingredients: The fresher your ingredients, the better your cake will taste. If possible, use organic and/or locally sourced ingredients.
  • Don't Overmix the Batter: Overmixing the batter can result in a tough, dense cake. Mix the batter just until the ingredients are combined.
  • Use a Springform Pan: A springform pan is the best type of pan to use for baking a salted peanut cake. It allows you to easily remove the cake from the pan without damaging it.
  • Bake the Cake Until a Toothpick Inserted into the Center Comes Out Clean: This is the best way to test if the cake is done baking.
  • Let the Cake Cool Completely Before Frosting: This will help the frosting to set properly and prevent it from melting.

Conclusion:

The salted peanut cake is a delicious and easy-to-make cake that is perfect for any occasion. With its moist and fluffy texture, sweet and salty flavor, and creamy frosting, this cake is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert to make, give this salted peanut cake a try. You won't be disappointed!
