Chef John's Pecan Pie image

This is my idea of the perfect pecan pie. It has the perfect ratio of crunchy nuts to the sweet, sticky goodness underneath. And thanks to the blind-baking, the crust is wonderfully crisp.

Tips:

  • Choose the right pecans. Use pecan halves or pieces that are fresh and plump, with a light brown color. Avoid any pecans that are dark or shriveled.
  • Toast the pecans. Toasting the pecans brings out their flavor and makes them more fragrant. You can toast them in a preheated oven at 350°F for 10-12 minutes, or in a skillet over medium heat until they are golden brown and fragrant.
  • Use a quality pie crust. You can use a store-bought pie crust or make your own. If you are using a store-bought crust, be sure to pre-bake it according to the package directions.
  • Don't overmix the filling. Overmixing the filling can make the pie tough. Mix the ingredients just until they are combined.
  • Bake the pie at a high temperature. This will help to set the filling and prevent the pie from becoming runny.
  • Let the pie cool completely before serving. This will allow the filling to set and the flavors to develop.

Conclusion:

With its rich, buttery filling and crunchy pecan topping, this pecan pie is sure to be a hit at your next gathering. Follow these tips to make the perfect pecan pie every time.
