Steps:
- Slice the beef against the grain into 1/2-inch wide strips and place into a large resealable bag. In a bowl, whisk together the soy sauce, oil, lime juice, brown sugar, garlic and ginger. Pour the marinade into the bag over the beef. Seal the bag and toss to coat completely. Place the bag into a large bowl and put into the refrigerator to marinate for at least 1 hour or as long as overnight.
- To serve: Preheat a grill or grill pan over medium-high heat. Thread 24 of the beef strips onto the skewers. Oil the grill gates and place the beef on the grill. If desired, reserve the remaining beef strips and marinade for another use, such as Round 2 Recipe Beef and Cabbage Stir Fry. Cook the skewers 2 to 3 minute per side. Remove from the heat, place on a serving platter and sprinkle with the scallions. Serve immediately.

Tips:
- Choose the right cut of beef: For this marinade, flank steak, skirt steak, or hanger steak are all good choices. These cuts are relatively thin and have a good amount of marbling, which will help them absorb the marinade and cook quickly.
- Make sure the marinade is flavorful: The marinade is what gives the beef its flavor, so it's important to make sure it's packed with flavor. Use a variety of herbs, spices, and citrus juices to create a marinade that is both savory and tangy.
- Let the beef marinate for at least 30 minutes: The longer the beef marinates, the more flavor it will absorb. If you're short on time, you can marinate the beef for as little as 30 minutes, but for best results, let it marinate for at least 2 hours or overnight.
- Cook the beef over high heat: This will help to sear the outside of the beef and lock in the juices. Cook the beef for just a few minutes per side, or until it reaches your desired doneness.
- Let the beef rest before slicing: This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
Conclusion:
This beef marinade is a great way to add flavor and tenderness to your favorite cuts of beef. It's easy to make and can be used with a variety of cooking methods. Whether you're grilling, pan-frying, or roasting your beef, this marinade will help you create a delicious and memorable meal.
