BAKED PENNE WITH THREE CHEESES

Baked Penne with Three Cheeses image

I don't believe in serving kids macaroni and cheese every day. It should be treated as an indulgence, because that's what it is. This is my version of the classic macaroni and cheese Xea's grandmother makes. Older kids can easily make this by themselves. Add a big green salad and they can have dinner ready before you get home from work!

Kosher salt
1 pound penne rigate pasta
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour
3 cups heavy cream
1/4 teaspoon freshly grated nutmeg
1 tablespoon seasoned salt, such as Lawry's
1 teaspoon freshly ground black pepper
1/2 pound shredded whole-milk mozzarella cheese

1/2 cup shredded Parmigiano-Reggiano cheese
1/2 cup dried breadcrumbs (preferably panko)

Steps:

  • Preheat the oven to 350 degrees F.

THREE CHEESE BROCCOLI AND PENNE BAKE

Three Cheese Broccoli and Penne Bake image

This is another of my family's all time favorite dishes! This recipe calls for an 11 x 7-inch pan, which will feed 3 people easily, I strongly suggest to double up the ingredients and bake it in a 13 x 9-inch baking pan if you are feeding more than 4 people, everyone will want seconds! I have also added in ground turkey that I cook with the garlic before I saute the broccoli, you might have to bake it in a larger baking dish if you are adding in ground turkey. to the mixture also.

  • Use a variety of cheeses to create a flavorful and complex dish. A good combination is a hard cheese, such as Parmesan or cheddar, a soft cheese, such as mozzarella or fontina, and a creamy cheese, such as ricotta or mascarpone.
  • Cook the penne pasta al dente, so that it is still slightly firm to the bite. This will help it hold its shape in the casserole.
  • Don't overcook the sauce. It should be thick and creamy, but not too thick or pasty.
  • Be generous with the cheese. It is what makes this dish so rich and decadent.
  • Top the casserole with a layer of breadcrumbs before baking. This will give it a golden brown crust.
  • Let the casserole rest for a few minutes before serving. This will allow the flavors to meld together.

Conclusion:

This saucy penne and three-cheese bake is a delicious and easy-to-make dish that is perfect for a weeknight meal or a special occasion. It is sure to be a hit with everyone who tries it!
