1/2 teaspoon crushed red pepper flakes, or to taste
Shaved Parmesan, for garnish
3 tablespoons extra-virgin olive oil
1 pound sweet Italian sausage
Kosher salt to taste, plus 1 1/2 teaspoons
2 pounds broccoli rabe, stems trimmed
1 pound orecchiette pasta
4 cloves garlic, sliced

Steps:

  • Heat oil in a large skillet over medium heat. Add sausage, and cook, turning occasionally until browned, about 10 minutes. Remove sausage to a plate and reserve pan and sausage drippings.
  • Meanwhile, bring a large pot of cold water to a boil over high heat. Add a large pinch of salt and broccoli rabe and cook, uncovered, until broccoli rabe is bright green and tender but still slightly crisp, about 5 minutes. Immediately transfer broccoli rabe using tongs to a colander (reserve boiling water) and rinse under cold running water. Chop into bite-sized pieces and set aside.
  • Add pasta to reserved boiling water and cook, stirring occasionally, until al dente (tender but not mushy), about 12 minutes. Meanwhile, heat reserved pan and drippings over medium heat. Add garlic and cook, stirring frequently, until it is golden brown, about 5 minutes. Add broccoli rabe, pepper flakes, and 1 1/2 teaspoons of salt; increase heat to medium-high, and cook, continually stirring, until broccoli rabe is hot and tender, about 5 minutes. Slice sausage into 1/4-inch thick coins and add to pan and mix well cook until sausage is warmed through, about 5 more minutes.
  • Drain pasta in a colander in sink, reserving 1/4 cup of cooking liquid. Toss pasta and liquid with broccoli rabe mixture. Transfer pasta to a serving dish or individual bowls, garnish with Parmesean and serve.

2 large heads radicchio, about 10 ounces each
3 to 4 tablespoon extra-virgin olive oil, more to taste
1/4 teaspoon salt, more to taste
2 pounds sweet or hot Italian sausages
1 lemon, halved
Basil leaves, for serving

Steps:

  • Light or heat up the grill. Halve radicchios lengthwise through stem end, and toss with 1 tablespoon olive oil (or more if you need it to coat) and 1/4 teaspoon salt.
  • Put radicchios, cut side down, and sausages on the grill and cover. Let cook for 2 to 3 minutes, until outer radicchio leaves are dark brown. Transfer to a cutting board and let cool while sausages finish cooking, about 5 minutes more.
  • When cool enough to handle, thinly slice radicchios. The outsides should be charred, and the insides should still be crisp and raw. Combine in a bowl with another 2 tablespoons olive oil and the juice of half a lemon. Taste and correct seasonings, adding lemon juice, salt and olive oil to taste.
  • Spread radicchio on a platter and top with grilled sausages. Garnish with basil and serve.

12 ounces orecchiette, cooked
8 ounces fresh chorizo sausage, mild or 8 ounces spicy sausage, casings removed
3 green onions, thinly sliced
2 garlic cloves, sliced thinly
8 ounces cremini mushrooms, sliced
salt and pepper
3 tomatoes, skins removed, seeded and diced
1/2 cup low sodium chicken broth
1/2 cup grated parmesan cheese, plus more for serving

Steps:

  • Bring large pot of salted water to a boil. Add pasta and cook according to package direction.
  • Meanwhile heat a large non stick pan to medium.
  • Add the broken up sausage and saute until no longer pink.
  • Add the mushrooms/garlic and continue to cook until mushrooms have reduced in size.
  • Add most of green onions and cook until limp. Reserving some for garnish.
  • Add the chicken stock and cook for another 3 minutes.
  • Add tomatoes, seasonings to taste and continue cooking for anther 3 minutes.
  • Reserve 1/2 cup pasta cooking water and drain the pasta.
  • Return to pot and combine the pasta/pasta water with the meat mixture along with the cheese.
  • Divide into dishes and serve with additional cheese/green onions as garnish.

1 pound sweet Italian sausage, removed from casings
1 tablespoon butter, cut into small pieces

  • Heat broiler. Place peppers, skin side up, on a foil-lined baking sheet; broil 4 inches from heat until charred, 18 to 20 minutes. Transfer to a large bowl. 1 package (19-1/2 ounces) Italian turkey sausage links, casings removed

500 g orecchiette (pasta shaped like small flat hats)
4 -5 medium onions
1/2 radicchio
1 fresh red chili pepper
100 -200 g parmesan cheese (depending on how cheesy you would like your dish to be)
olive oil
1 garlic clove
salt
pepper

Steps:

  • Boil the pasta in salted water until it is al dente (aprox. 11 minutes).
  • While the pasta is cooking, chop the onion into thin slices and stew it in a frying pan toghether with olive oil, salt, pepper, chili and the squashed clove of garlic.
