1/2 cup finely chopped green olives
1 tablespoon extra-virgin olive oil
4 ciabatta or other rolls about the length of sausages, split
4 bratwurst, andouille, or other flavorful, fully cooked sausages, split
1/2 cup bottled piquillo peppers or roasted red peppers, drained and cut into strips
2 cups baby arugula

Steps:

  • Combine olives and oil, then spread on bottom halves of rolls.
  • Heat a grill pan or large heavy skillet (not nonstick) over medium-high heat until hot, then heat sausages until hot, about 8 minutes.
  • Make sandwiches on rolls with peppers, sausages, and arugula. Cut in half.

2 bottles (12 ounces each) beer or nonalcoholic beer
2 tablespoons prepared mustard
1 tablespoon ketchup
8 fresh Italian sausage, bratwurst or Polish sausage links
1 large onion, thinly sliced
1 tablespoon olive oil
1 medium sweet red pepper, coarsely chopped
1 medium green pepper, coarsely chopped
1 medium onion, chopped
1 garlic clove, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
8 hot dog buns, split
Spicy brown mustard

Steps:

  • In a 6-qt. stockpot, combine beer, prepared mustard and ketchup. Add sausages, sliced onion and, if necessary, water to cover. Bring to a simmer and cook, uncovered, until a thermometer inserted in sausage reads 160°, 10-12 minutes., Meanwhile, in a large skillet, heat oil over medium heat. Add peppers and chopped onion; cook and stir until tender, 6-8 minutes. Stir in garlic and seasonings; cook 30 seconds longer. Remove from heat., Remove sausages from beer mixture. Grill sausages, covered, over medium heat or broil 4 in. from heat until lightly browned, 1-2 minutes on each side. Cut each sausage lengthwise in half. Serve in buns with pepper mixture and brown mustard.

1 small red onion, thinly sliced
1/2 medium green pepper, julienned
1/2 medium sweet red pepper, julienned

Salt and pepper to taste, optional
2 French or submarine rolls, split and toasted

5 pounds Italian sausage links
2 (28 ounce) cans whole peeled tomatoes
1 (28 ounce) can crushed tomatoes
1 (29 ounce) can tomato sauce
¼ cup grated Parmesan cheese
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 tablespoon white sugar
1 tablespoon onion powder
4 large green bell peppers, thickly sliced
3 large onions, thickly sliced
25 (6 inch) Italian-style hoagie buns

8 teaspoons olive oil, or as needed, divided
4 ounces chorizo sausage, casings removed and meat crumbled
½ cup diced green onion
salt and ground black pepper to taste
½ cup cooked long-grain white rice
2 ounces goat cheese
1 large egg
3 tablespoons chopped fresh parsley, divided
2 cloves garlic, crushed
1 teaspoon ground cumin
1 blood orange, zested and juiced
1 pinch cayenne pepper, or more to taste
12 piquillo peppers
2 tablespoons chopped almonds

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Brush a baking dish with 1 tablespoon olive oil.
  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Saute sausage, green onion, and a pinch of salt in hot oil until meat is browned and crumbly and onion is translucent, 5 to 7 minutes. Remove from heat and cool for 10 minutes.

1/2 cup olive oil
1 tablespoon vegetable oil
2 patties turkey breakfast sausage
3 eggs
Salt and pepper
1 tablespoon Arugula Pesto
2 slices provolone cheese
2 whole wheat English muffins, split, toasted

Steps:

  • In food processor, place arugula, almonds, garlic and Parmesan cheese. Cover; process with on-and-off pulses until coarsely chopped. With processor running, slowly pour in olive oil, processing until blended. Scrape pesto into container with lid. Store in refrigerator until ready to use.
  • In 8-inch nonstick skillet, heat vegetable oil. Add sausage patties; cook until browned and meat thermometer inserted in center of patties reads 165°F. Remove sausage patties from skillet; drain on paper towels.
  • In small bowl, beat eggs well with whisk. In same skillet over medium-low heat, add eggs; sprinkle with salt and pepper to taste. Cook and stir egg to scramble, cooking until just about set. Stir in pesto; cook until set.
  • Place 1 slice of provolone cheese on bottom halves of English muffins. Top each with sausage patty and eggs. Cover with top halves of muffins. Serve warm.
