- With a teaspoon, scoop out the flesh from the interior of the zucchini, so they resemble boats. Place the zucchini boats in a 9-by-13-inch casserole dish. Chop the zucchini flesh and set aside.

- In a small mixing bowl combine the mozzarella and feta and set aside.

I use silicon muffin tins so that any cheese that may get ont he tins comes off easy durning cleaning. I usually flatten the biscuits as I go so I only flatten the biscuits I need - I usually get 10 to 12 depending how full I fill them. I just bake up the remaining biscuits and serve them for supper. Feel free to play with the sausage mixture - we have picky ones at our house - so adding onions, garlic and green peppers is not an option - but don't let that stop you!
