SAUSAGE AND BEANS

Sausage and Beans image

The original recipe comes from Taste of Home - but I altered some things for what I had and family preference. For the sausage in this recipe - I used elk/deer sausage that our family friend gave to us. You could use any kielbasa type sausage as well. This recipe has a lot of sauce - which we feel is perfect for sopping up with a good loaf of bread! Yield and time are approximate.

1/2 lb fully cooked sausage, cut into 1/4 inch slices
4 cups chicken broth, I used a quart of homecanned
1 (16 ounce) can black beans, I used 1 pint homecanned
1 (16 ounce) can great northern beans, I used 1 pint homecanned

  • Use a good quality sausage: This will make a big difference in the flavor of your dish. Look for a sausage that is made with fresh, high-quality meat.
  • Sauté the sausage before adding it to the beans: This will help to brown the sausage and give it a more flavorful crust.
  • Add vegetables to your dish: This will make it more nutritious and colorful. Some good options include onions, peppers, and carrots.
  • Season your dish to taste: This may include adding salt, pepper, garlic powder, or chili powder.
