1 pound bulk spicy pork sausage
4 cups water
1 cup quick-cooking grits
4 ounces shredded Gouda cheese
3 tablespoons butter
¼ teaspoon hot pepper sauce

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cook the sausage in a large skillet over medium-high heat, stirring until the sausage is crumbly and lightly browned. Drain off the grease and place the sausage in a bowl. 2 cups water
2 cups chicken broth
1/2 teaspoon salt
1-1/4 cups quick-cooking grits

2 cups whole milk
1 cup stone-ground grits
Coarse salt and freshly ground black pepper
12 ounces mild pork or turkey sausage
1 cup grated sharp Cheddar (about 4 ounces)
1 tablespoon unsalted butter, plus more for the dish
1/4 teaspoon cayenne pepper
4 large eggs, lightly beaten
2 green onions, white and green parts, chopped
1 jalapeno chile, seeded and finely chopped

Steps:

  • In a large heavy-bottomed saucepan, combine 2 cups water and the milk and bring to a boil over medium-high heat. Stir in the grits and return to a boil. Season with 1 teaspoon of salt and pepper. Decrease the heat to low and simmer, stirring occasionally, until creamy and thick, 45 to 60 minutes.
  • Meanwhile, heat a medium skillet over medium heat. Add the sausage and cook, stirring occasionally to break up the sausage, until no longer pink and the meat is cooked through, 5 to 7 minutes. Remove with a slotted spoon to a paper-towel-lined plate to drain and cool slightly.
  • Remove the grits from the heat and add the cheese and butter. Taste and adjust for seasoning with salt and pepper and stir to combine. Add the reserved sausage, cayenne, eggs, green onions and jalapenos and stir until well incorporated.
  • Butter a large (9-by-13-inch) casserole dish. Spoon the mixture into the prepared dish. At this point, the casserole can be covered and refrigerated overnight (bring to room temperature before baking), or baked immediately.

1 lb breakfast sausage, cooked and drained
4 cups water
1 teaspoon salt
1 cup quick-cooking grits

1 small red onion, halved and thinly sliced
1/2 bunch asparagus, tough ends removed, cut into 1-inch lengths
1 teaspoon fresh thyme or 1/4 teaspoon dried
1 teaspoon fresh lemon juice
Coarse salt and ground pepper
1/4 cup grits or yellow cornmeal
2 tablespoons crumbled fresh goat cheese

  • Heat oil in a skillet over medium-high. Cook sausage until browned, tossing occasionally, 1 to 2 minutes; transfer to a plate. Reduce heat to medium. Cook onion until softened, 3 to 5 minutes. 3/4 pound bulk fresh sausage
1 tablespoon vegetable oil
1 onion, chopped fine
1 large green bell pepper, chopped fine
4 large eggs
2 teaspoons Worcestershire sauce

  • In a large heavy saucepan bring the water to a boil, stir in the grits slowly, and simmer them, covered, stirring occasionally, for 7 minutes. Stir in 1 1/2 cups of the Monterey Jack, the butter, the jalapeño, the scallions, and salt and pepper to taste, stirring until the cheese is melted, and spread the mixture in a buttered 13- by 9-inch baking dish.
  • In a heavy skillet brown the sausage over moderate heat, stirring and breaking up the lumps, transfer it with a slotted spoon to paper towels to drain, and pour off the fat. Add the oil to the skillet and in it cook the onion and the bell pepper over moderately low heat, stirring, until the vegetables are softened. In a bowl whisk together the eggs, the Worcestershire sauce, and salt to taste, stir in the sausage and the vegetables,and spread the mixture over the grits. Sprinkle the sausage mixture with the remaining 1 1/4 cups Monterey Jack and bake the grits in the middle of a preheated 350°F. oven for 30 to 35 minutes, or until the eggs are firm.
