3 ½ cups Yukon gold potatoes, cut into 1/4-inch pieces

3 andouille sausage links, chopped into small pieces

2 tablespoons canned chopped green chiles
2 prepared pie crusts
1 cup shredded mild Cheddar cheese
1 cup shredded Gouda cheese
1 egg
1 tablespoon milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Add canola oil to a 12-inch nonstick pan over medium heat. Add potatoes, salt, and pepper. Fry until potatoes are fork-tender, about 20 minutes. Transfer to a medium bowl.

1 (1 lb) package frozen hash brown potatoes (can be patties)
12 -14 eggs
1/2 cup water
4 ounces diced green chilies
1 1/2 cups mild cheddar cheese, shredded
salt and pepper

  • Preheat oven to 350º.
  • Lightly spray a 9 x 13 baking dish with cooking spray.
  • Add hash browns to bottom of dish and sprinkle with salt and pepper. (If the hashbrowns are preseasoned, you can skip this step.).
  • (If you are going to add cooked sausage or bacon, place it on top of the potatoes.).
  • Add 1/2 of the cheese and half of the Chiles on top.

4 large potatoes, shredded or 4 cups frozen hash browns, cooked
1/2 cup onion, shredded
1 1/2 cups baking mix
2/3 cup milk
1 teaspoon butter
3 eggs
1/4 teaspoon black pepper
1 cup shredded cheddar cheese (or more)
4 large cooked green chilies, such as New Mexico Hatch
cooking oil

1 can (14-1/2 ounces) chicken broth
3/4 cup 2% milk
3/4 cup half-and-half cream
2 cans (4 ounces each) chopped green chilies
1 cup shredded cheddar cheese
1 cup shredded Swiss cheese
1/2 cup plus 2 tablespoons shredded Parmesan cheese divided
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
3 to 4 drops hot pepper sauce
Dash ground nutmeg

Steps:

  • Place potatoes in a Dutch oven; cover with water. Bring to a boil. Cover and cook for 2-3 minutes. Drain and pat dry; set aside., In a large saucepan, saute onion in butter and oil until tender. 1 lb Italian sausage (hot or sweet)
4 medium potatoes
1 package dry onion soup mix
2 cups water

Steps:

  • Cook sausage in a little bit of water until just done.
  • Cook off water, or pour out of pan and pan fry sausage until well browned.
  • Wash potatoes (or peel if desired) and cut into bite sized chunks.
  • Remove sausage from pan.
  • Mix soup mix with water and use to deglaze the pan.
