Steps:
- Preheat a cast-iron skillet (or ovenproof frying pan) with the oil, then add the onion and bell pepper (capsicum) and fry till slightly softened over medium heat, then add the chopped sausage and fry till the sausage is cooked.
- Meanwhile, either steam/boil/microwave the chopped sweet potato till it is almost completely cooked (i.e. soft enough to pierce all the way through but not mushy), then add this to the pan and stir it through for a few minutes to take on the other flavours of the dish.
- Preheat your broiler.
- Beat together the eggs and milk in a bowl, then carefully pour it over the top of the mixture, giving it a little stir to ensure the egg is getting right between all the chunks of sausage and vegetables.
- Sprinkle grated parmesan over the top, then lower the heat of the burner and leave to cook till the bottom and sides have just set, then place under the broiler to cook the top.
- Once it's finished cooking, remove and serve either warm or cold with a spicy tomato salsa or chutney and some green salad on the side.
SAUSAGE AND PEPPER FRITTATA
Steps:
- Preheat the oven to 350 degrees F.
- Coat a nonstick 10-inch saute pan with olive oil. Add the sausage and brown. Add the peppers and saute until they are soft.
- In a bowl, add the Parmigiano to the beaten eggs and season lightly with salt. Using a heat-proof rubber spatula, stir the eggs into the pan with the sausage and peppers. Stir the eggs to evenly distribute the sausage and peppers throughout the eggs. Once the eggs set on the bottom and around the sides of the pan, place the pan in the preheated oven for 7 to 8 minutes or until the eggs are cooked through. Remove from the pan. Cut into wedges and serve hot or a room temperature.

POTATO AND RED PEPPER FRITTATA
This recipe is from Everyday Food. The original recipe calls for 2 teaspoons chopped fresh rosemary. I choose to omit it. Being onion lovers, I added a whole onion rather than 1/2 as the recipe stipulated. NOTE: It's okay if potatoes are not cooked evenly. Some will be browned; others only transparent. The original recipe suggests using an 8-inch skillet.

Steps:
- Heat 1 tbsp of the oil in a large non-stick pan. Add the sausages (no need to prick them) and fry over a medium heat for 10-12 minutes, turning occassionaly, until evenly browned. Remove, drain on kitchen paper and let cool slightly before cutting each one into 5 diagonal slices.
- Wipe out the pan, then pour in the remaining oil and heat up. Tip in the sweet potato and red onion and stir-fry for 10-12 minutes until softened and turning golden. Stir in the spinach for a few seconds (just enough to wilt), then return the sausages to the pan. Preheat the grill to high.
- Beat the eggs, season, pour them into the pan, then scatter over the snipped chives. Cook over a medium heat for about 5 minutes, or until the edges begin to set. Place the pan under the grill for a few more minutes until the top begins to puff up and is lightly browned. Scatter over the remaining snipped chives, and serve with Mozzarella and Semi dried tomatoes and a fresh green salad.
Tips:
- Use a variety of vegetables: Don't limit yourself to just sweet potatoes and red peppers. Try adding other vegetables such as zucchini, mushrooms, or spinach.
- Don't be afraid to experiment with different types of sausage: Italian sausage, chorizo, or breakfast sausage all work well in this recipe.
- Make sure the potatoes are cooked through before adding them to the frittata: You can either roast them in the oven or boil them until they are tender.
- Don't overcook the frittata: It should be cooked through, but still slightly runny in the center.
- Serve the frittata with your favorite toppings: Some popular options include salsa, sour cream, and avocado.
Conclusion:
This sausage, sweet potato, and red pepper frittata is a delicious and easy-to-make breakfast or brunch dish. It's packed with flavor and nutrients, and it's sure to be a hit with your family and friends. So next time you're looking for a quick and easy meal, give this frittata a try!
