Number Of Ingredients 6

250g/ 8oz green beans (, trimmed (Note 1))
1 tsp salt
1 tbsp extra virgin olive oil ((or... butter!))
2 garlic cloves (, finely minced (~ 2 tsp), do not use jar or garlic crusher (Note 2))
1/8 tsp salt
1 pinch black pepper

Steps:

  • Blanch beans: Bring a large saucepan of water to the boil with 1 teaspoon of salt. Add beans, cook for 4 minutes (they will turn bright green), drain, then rinse under cold tap water to cool. (There's really no need to shock in ice water). Shake off excess water.
  • Sauté: Heat oil in a large skillet over medium high heat. Add green beans and garlic. Toss (or stir!) for 2 minutes until the garlic is golden and crispy. Add salt and pepper, then toss.
  • Serve: Transfer beans to serving dish. Serve warm!
  • Prepare ahead: Blanch beans per step 1, cool and dry, store in fridge until required. When ready to serve, just toss with garlic. It's an instant on-demand side!

EARLY GARLIC GREENS (GARLIC SCAPES)

Early Garlic Greens (Garlic Scapes) image

These are a treasure! I find them at farmers' markets in the early summer. This recipe is my favorite preparation, steamed and simple. I serve them as a warm side dish, but I always cook extra so I have leftovers in the refrigerator for cold snacks and salads. They have the texture of green beans with a light and fresh garlic flavor. Alternative preparations include sauted in olive oil or added to soups and stews.

Time 18m

Yield 6 serving(s)

Number Of Ingredients 2

1 lb early garlic greens
salt and pepper

Steps:

  • Trim garlic greens by cutting the top (pointy end) to within 1/2" of bud. There will be 6"-8" of green below bud.
  • Greens may be cut into any preferred length as you would with green beans. (I like to leave them long because they are beautiful and fun.).
  • Steam in steamer basket over boiling water approximately 8 minutes. Time may vary depending on size of green, so test at 5 minutes and adjust time accordingly.
  • Remove from steamer and place in serving bowl.
  • Toss with salt and pepper to taste.
  • Serve warm or cold.

Tips:

  • Choose young and tender garlic scapes for the best flavor and texture.
  • Trim the tough ends of the garlic scapes before cooking.
  • Slice the garlic scapes thinly so that they cook evenly.
  • Use a large skillet or wok to cook the garlic scapes so that they have plenty of room to spread out.
  • Heat the oil over medium-high heat before adding the garlic scapes. This will help to prevent them from sticking to the pan.
  • Cook the garlic scapes for 2-3 minutes, or until they are softened and slightly browned.
  • Add the green beans and cook for an additional 2-3 minutes, or until they are tender-crisp.
  • Season the garlic scapes and green beans with salt, pepper, and any other desired seasonings.
  • Serve the garlic scapes and green beans immediately.

Conclusion:

Garlic scapes and green beans are a delicious and versatile combination that can be used in a variety of dishes. This simple saute is a great way to enjoy these fresh summer vegetables. With just a few simple ingredients and a few minutes of cooking time, you can have a delicious and healthy side dish or main course. So next time you're looking for a quick and easy meal, give this garlic scape and green bean saute a try.
