HABAS CON JAMóN (BROAD BEANS WITH HAM) - SPAIN
This is a delicious dish best made with fresh broad beans and mountain-cured Serrano ham. It works best with large spring onions or scallions, which have a gentler flavour than normal onions. I'm guessing at times. Posted for Zaar World Tour III

DAD'S LIMA BEAN SOUP WITH HAM BONE
This was one of my father's favorite dishes, a staple of Depression-era cooking when fresh meat was scarce and soup stretched everything. Simmered until thick, with chunks of ham - even lima-bean-haters enjoy this hearty soup.

Tips:
- Soak the lima beans overnight before cooking, or boil them for 30 minutes before sautéing.
- You can substitute frozen or canned lima beans for fresh beans, but be sure to rinse them well before using.
- Use a heavy-bottomed skillet or Dutch oven for sautéing the lima beans and ham. This will help to prevent sticking and scorching.
- Add a splash of white wine or chicken broth to the skillet while cooking the lima beans and ham. This will help to deglaze the pan and add flavor.
- Season the lima beans and ham with salt, pepper, and other spices to taste. You can also add a pinch of red pepper flakes for a bit of heat.
- Serve the lima beans and ham over rice, pasta, or mashed potatoes. You can also serve them as a side dish with grilled chicken or fish.
