CREAMY LEMON-MUSHROOM PASTA
This is a lovely creamy, but light, pasta dish. The lemon flavor adds a wonderful bright note to the rich sauce and earthy mushrooms. This is a great meatless entrée or side pasta dish - or add some grilled salmon, shrimp, or chicken if you'd like!

Steps:
- Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain, reserving 1 cup of pasta water.
- Meanwhile, heat oil and butter in a large nonstick skillet over medium heat. Saute mushrooms in the pan, adjusting heat as necessary, until golden brown, tender, and they have released their moisture. Season mushrooms with salt and pepper while cooking. Add garlic and saute until fragrant, about 1 minute.
- Pour in heavy cream and bring to a simmer until slightly thickened, 2 to 3 minutes. Add in lemon zest and juice. Stir to combine. Stir in 1/3 cup Parmesan cheese until combined and melted in. Taste and adjust salt and pepper to your preference.
- Add in the cooked pasta and toss in the sauce. Add in some of the reserved pasta water if needed, a little at a time, to thin the sauce so that it coats and sticks to the pasta without being too thick or sticky. It should be a nice creamy consistency.
- Serve pasta with a sprinkling of minced parsley and an additional sprinkling of Parmesan cheese, if desired.

Tips:
- Choose the Right Mushrooms: Use fresh, firm mushrooms for the best flavor and texture. Cremini, shiitake, and oyster mushrooms are all great options.
- Slice Mushrooms Evenly: Uniformly sliced mushrooms will cook evenly. Aim for slices that are about 1/4-inch thick.
- Don't Crowd the Pan: When sautéing mushrooms, it's important to give them enough space to brown properly. Don't overcrowd the pan, or the mushrooms will steam instead of sautéing.
- Cook Mushrooms in Batches: If you have a lot of mushrooms to cook, cook them in batches. This will prevent the mushrooms from overcrowding the pan and steaming.
- Use High Heat: Sautéing mushrooms over high heat will help them brown quickly and develop a nice flavor.
- Don't Stir the Mushrooms Too Often: When sautéing mushrooms, let them sit in the pan undisturbed for a few minutes. This will help them develop a nice golden-brown crust.
- Season Generously: Mushrooms have a mild flavor, so don't be afraid to season them generously. Salt, pepper, garlic powder, and thyme are all great options.
- Add Acid: A squeeze of lemon juice or a splash of white wine can help brighten the flavor of sautéed mushrooms.
- Finish with Cream: If you want a rich and creamy sauce, stir in some heavy cream or crème fraîche at the end of cooking.
Conclusion:
Sautéed mushrooms are a versatile and delicious side dish that can be enjoyed in many different ways. Whether you serve them on their own, over pasta, or as a topping for a steak or chicken dish, sautéed mushrooms are sure to be a hit. With just a few simple ingredients and a few minutes of cooking time, you can create a delicious and flavorful dish that will impress your family and friends. So next time you're looking for a quick and easy side dish, give sautéed mushrooms a try. You won't be disappointed.
