ROASTED POTATOES WITH TOMATOES, BASIL, AND GARLIC

Roasted Potatoes with Tomatoes, Basil, and Garlic image

Simple and light. The roasted tomato gives a light and tangy flavor which balances with the starchiness of the potatoes. Use a red or yellow potato for best flavor. Garlic, fresh basil, and a hint of rosemary add to the aroma. My girlfriend loves this as a side with chicken or pork.

Tips:

  • Select firm, small red potatoes: Choose potatoes that are about 1-2 inches in diameter, as they will hold their shape better during sautéing.
  • Wash and dry the potatoes thoroughly: This will help prevent the potatoes from sticking to the pan.
  • Cut the potatoes into even-sized pieces: This will ensure that they cook evenly.
  • Use a large skillet: This will give the potatoes plenty of room to cook without overcrowding.
  • Heat the oil over medium-high heat: This will help create a nice crust on the potatoes.
  • Add the potatoes and cook, stirring occasionally: Cook until the potatoes are tender and browned, about 15-20 minutes.
  • Add the tomatoes, garlic, and seasoning: Cook for an additional 5-7 minutes, or until the tomatoes are softened and the garlic is fragrant.
  • Garnish with fresh herbs: This will add a pop of color and flavor to the dish.

Conclusion:

Sautéed red potatoes and tomatoes is a simple but flavorful side dish that can be enjoyed with a variety of main courses. The potatoes are tender and browned, while the tomatoes add a burst of sweetness and acidity. This dish is also very versatile and can be easily customized to your liking. For example, you can add different herbs or spices, or you can use different types of tomatoes, such as cherry tomatoes or grape tomatoes.
