Categories     main-dish

Time 2h39m

Yield 8 servings

Number Of Ingredients 14

1/4 cup chopped parsley
1 bunch green onions, chopped
1 pint oysters, in their liquor
1 cup butter
1 cup flour
2 onions, chopped
2 ribs celery, finely chopped
1/2 green bell pepper, finely chopped
6 cloves garlic, minced
3 bay leaves
2 quarts shrimp or seafood stock
4 blue crabs, halved
1 pound raw shrimp, peeled and deveined
1 pound fish fillets, such as redfish or another firm-fleshed fish, cut into pieces

Steps:

  • In a large, heavy saucepan or dutch oven melt butter and whisk in flour until smooth. Cook over medium heat, stirring constantly, until roux is a peanut butter color, about 20 minutes.
  • Immediately add onions, celery, bell pepper, garlic, and bay leaves and cook until vegetables are very soft, about 8 minutes. Add stock and whisk to combine. Bring to a boil, skim surface, and reduce heat to a simmer. Add crabs and cook for 1 1/2 hours, until thickened and flavorful. If gumbo seems too thick, thin with water or seafood stock.
  • Add shrimp and fish and cook for 5 to 7 minutes, or until shrimp turn pink and fish is cooked through. Add oysters (with their liquor), parsley, and green onions, and cook until edges of oysters curl, about 5 to7 minutes. Taste and adjust seasoning, if necessary, and serve in large bowls over hot white rice.

SAVANNAH SEAFOOD STUFFING

Savannah Seafood Stuffing image

This is a seafood stuffing that has been in my family for a while. We have never actually stuffed the bird with this to avoid the turkey having a 'fishy' taste. We tend to like our dressing very moist, but if you prefer a drier stuffing, only use half of the broth.

I like to add other seafood and fish to make it even more hearty or just because I'm a meat lover. Some times I'll add corn kernals or mini cob on the cob.Serve over rice (a SC favorite) or pasta.

Tips:

  • Use a variety of seafood. This will give your gumbo a more complex flavor. Good choices include shrimp, crab, oysters, and fish.
  • Don't overcook the seafood. Seafood cooks quickly, so be careful not to overcook it or it will become tough.
  • Use a good quality stock. The stock is the base of your gumbo, so it's important to use a good quality one. You can use chicken stock, vegetable stock, or seafood stock.
  • Add vegetables. Vegetables add flavor and texture to gumbo. Good choices include onions, celery, bell peppers, and okra.
  • Season your gumbo well. Gumbo should have a flavorful broth. Season it with salt, pepper, garlic, and cayenne pepper.
  • Let the gumbo simmer for a while. This will allow the flavors to meld together. The longer you simmer the gumbo, the better it will taste.
  • Serve gumbo over rice. Rice is the traditional way to serve gumbo. It helps to soak up the flavorful broth.

Conclusion:

Savannah seafood gumbo is a delicious and hearty dish that is perfect for a special occasion. It's also a great way to use up leftover seafood. So next time you have some leftover shrimp, crab, or fish, try making a pot of Savannah seafood gumbo. You won't be disappointed!
