Yield Makes 4 to 8 servings

Number Of Ingredients 17

For pork chops
2 cups milk
3 teaspoons salt
8 (1/2-inch-thick) pork chops (with or without bone; 2 lb total)
3 1/2 cups fresh bread crumbs (from 10 slices firm white sandwich bread, ground in a food processor)
1 tablespoon minced garlic
2 teaspoons chopped fresh rosemary or 1/2 teaspoon dried, crumbled
2 teaspoons chopped fresh thyme or 1/2 teaspoon dried, crumbled
2 to 3 tablespoons vegetable oil
2 to 3 tablespoons unsalted butter
For applesauce
3 lb mixed McIntosh and Gala apples
1/4 cup water
3 tablespoons sugar
1 tablespoon cider vinegar
1 Turkish or 1/2 California bay leaf
1/4 teaspoon ground allspice

Steps:

  • Marinate pork chops:
  • Stir together milk and 2 teaspoons salt in a shallow 3-quart dish, then add pork chops. Marinate, covered and chilled, turning over once, at least 1 hour.
  • Make applesauce while chops marinate:
  • Peel, core, and coarsely chop apples, then stir together with remaining applesauce ingredients in a 3-quart heavy saucepan. Bring to a simmer, stirring occasionally, then reduce heat to moderately low and cook, covered, stirring occasionally, until apples are falling apart, 15 to 20 minutes. Discard bay leaf and mash apples with a fork. Keep applesauce warm, covered.
  • Fry pork chops:
  • Preheat oven to 200°F.
  • Stir together bread crumbs, garlic, rosemary, thyme, and remaining teaspoon salt in a shallow bowl.
  • Lift pork chops from milk 1 at a time, letting excess drip off, and dredge in bread crumbs, lightly patting crumbs to help adhere, then transfer to a tray, arranging in 1 layer.
  • Heat 2 tablespoons oil and 2 tablespoons butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then sauté pork chops in 2 or 3 batches, without crowding, turning over once, until golden brown and just cooked through, 5 to 6 minutes per batch. Transfer as cooked to a platter and keep warm in oven. (Add more oil and butter to skillet as needed.)
  • Serve pork chops with applesauce.

Pork chops simmered in applesauce, white wine, and onions. I first made this on a camping trip, and it's very easy.

PORK CHOPS WITH GOLDEN APPLESAUCE

Pork Chops With Golden Applesauce image

Wow! These are so good. I literally closed my eyes when I ate them. Your family will want them, and your guests will beg you for the recipe. This is a Rachael Ray all time hit. The fresh piece of ginger is key here (only costs about .30 or.40 cents), so don't short cut with dried or you will be missing out. You can use regular raisins if you don't have golden.

Provided by Chef Sweet Sal

Categories     Pork

Time 35m

Yield 3-4 serving(s)

Number Of Ingredients 12

4 golden delicious apples, chopped
2 teaspoons lemon juice
2 ounces golden raisins, a handful
1 inch piece fresh gingerroot
3 tablespoons light brown sugar
2 cups apple juice or 2 cups cider, plus a splash for pan sauce
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
2 tablespoons vegetable oil or 2 tablespoons olive oil, 2 turns of the pan
4 (6 -8 ounce) thick center cut boneless pork chops, 1 inch thick
salt and pepper
2 tablespoons butter

Steps:

  • Combine first 8 ingredients in a medium pot placed over medium high heat and cook until a chunky sauce forms, 10 to 20 minutes (depends on consistency you prefer), stirring occasionally. If sauce begins to spatter as it bubbles, reduce heat back a little, but it should be allowed to reduce and form quickly. Once apples are soft and sauce forms, remove it from the heat.
  • Heat a large nonstick skillet over medium high heat. Add oil to the pan. Season chops on 1 side with salt and pepper. Using a pair of tongs, add chops to hot skillet seasoned side down. Season the opposite side of the chops with salt and pepper. Brown and caramelize the chops 2 minutes on each side, then reduce heat to medium and cook another 5 to 6 minutes, turning occasionally, until juices run clear.
  • Remove chops from heat and let them rest a couple of minutes for juice to redistribute. Deglaze the pan with a splash of apple juice and 2 tablespoons of butter. Pour pan sauce over chops. Remove ginger from the sauce and top chops with generous portions of warm golden apple sauce.

SAVORY APPLESAUCE

Categories     Condiment/Spread     Sauce     Fruit     Hanukkah     Apple     Fall

Yield Makes 6 servings

Number Of Ingredients 6

10 Granny Smith apples, peeled, cored, and cut into 8 pieces each
1 cup sugar
3/4 cup fresh lemon juice
2 (1-inch) pieces fresh ginger, peeled
3 whole cloves
2 sprigs fresh savory

Steps:

  • In large, heavy-bottomed stock pot, combine apples, sugar, lemon juice, ginger, cloves, and 1 cup water. Cover and set over high heat. Bring to boil, then reduce heat to moderate and simmer, covered, stirring occasionally, until apples are very soft, about 20 minutes.
  • Remove from heat and blend with whisk, breaking up any remaining apple pieces. Pass through ricer, food mill, or fine-mesh strainer. While applesauce is still warm, stir in sprigs of savory. Let applesauce cool, then remove savory before serving.

Tips:

  • Choose the right apples: Use firm, tart apples like Granny Smith or Braeburn. These apples hold their shape well and won't become mushy when cooked.
  • Don't peel the apples: The skin of the apples adds flavor and texture to the sauce. Just be sure to wash the apples thoroughly before cooking.
  • Use a variety of spices: Savory applesauce is a great way to experiment with different spices. Try adding cinnamon, nutmeg, cloves, or allspice.
  • Don't overcook the apples: You want the apples to be tender but still hold their shape. Overcooking them will make them mushy.
  • Serve the applesauce warm or cold: Savory applesauce is delicious served warm or cold. It's a great accompaniment to pork chops, chicken, or fish.

Conclusion:

Savory applesauce is a delicious and versatile condiment that can be used to enhance a variety of dishes. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a new way to enjoy apples, give savory applesauce a try. You won't be disappointed!
