4 medium boneless, skinless chicken breasts (1 1/4 pounds), trimmed
Salt and ground black pepper to taste (Optional)
1 tablespoon Country Crock® Spread
2 cups sliced mushrooms
¼ cup onion, chopped
3 tablespoons balsamic vinegar
⅓ cup chicken broth
1 teaspoon Dijon mustard

Steps:

  • Season chicken, if desired, with salt and black pepper.
  • Melt Country Crock® Spread in large nonstick skillet over medium-high heat and brown chicken, turning once, about 6 minutes. Remove chicken and set aside.
  • Cook mushrooms and onion in same skillet over medium heat, stirring occasionally, until tender, about 3 minutes. Add vinegar and simmer 1 minute. Stir in broth and mustard and simmer, stirring occasionally, 4 minutes, or until sauce is slightly thickened.

4 chicken thighs
1 (14 1/2 ounce) can chicken broth
1 (12 ounce) can beer
1 teaspoon thyme leaves
1 teaspoon McCormick's Montreal Brand steak seasoning (or any brand)
1/2 teaspoon seasoning salt
1 teaspoon celery seed
1 teaspoon poultry seasoning

Steps:

  • Remove skin and fat from the chicken thighs.
  • Place on the bottom of a slow cooker/crock pot.
  • Sprinkle the salt, pepper, thyme leaves, celery seeds and poultry seasoning over the chicken pieces.
  • Mix together until chicken pieces are coated with the seasonings.
  • Pour in the canned chicken broth and beer and stir well.
  • Cook on high for 3 or 4 hours or until chicken is tender and falling off the bones.
  • Allow to cool before deboning the thighs and store in a container in the refrigerator until ready to use.
  • Pour the broth into a glass jar and store in refrigerator until ready to use.

6 boneless skinless chicken breast halves (4 ounces each)
2 tablespoons olive oil
1 can (14-1/2 ounces) beef broth
2 tablespoons tomato paste
1 teaspoon poultry seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound fresh baby carrots
1 pound sliced fresh mushrooms
2 medium zucchini, sliced
Sliced French bread baguette, optional

Steps:

  • Place bread crumbs in a shallow bowl. Dip chicken breasts in bread crumbs to coat both sides; shake off excess., In a Dutch oven, heat oil over medium heat. Add chicken in batches; cook 2-4 minutes on each side or until browned. 1 medium potato, cut into 1-inch pieces
1 medium yellow onion, cut into 1-inch pieces
8 ounces fresh mushrooms, quartered
1 cup fresh baby carrots
1 cup celery, chopped
1 (14 1/2 ounce) can chicken broth
3 garlic cloves, minced
1 teaspoon dried rosemary leaves
1 teaspoon salt
1 teaspoon black pepper
3 tablespoons cornstarch
1/2 cup cold water
1 cup frozen peas, thawed
1 (4 ounce) jar pimientos, sliced & drained
19 3/4 ounces bob evans frozen buttermilk biscuits

Steps:

  • Preheat oven to 375°F.

1 medium carrot, cut up
1 small onion, cut up
1 sprig fresh parsley
5 cups cold water

Steps:

  • Heat oven to 400°F. In ungreased 15x10x1-inch pan, arrange roasted chicken and vegetable ingredients. Roast 1 hour to 1 hour 15 minutes or until chicken is medium to deep golden brown and pan juices are deep golden brown.
  • When cool enough to handle, remove chicken from carcass, reserving carcass, skin, pan juices and any browned bits from bottom of pan. Cut chicken into 1/2-inch pieces; cover and refrigerate. Discard, carrots, celery and onion from pan.
  • In 4- to 6-quart Dutch oven or stockpot, place chicken bones, skin, all pan juices and any browned bits. Add broth ingredients; heat to boiling. Skim foam from broth; reduce heat. Cover; simmer about 30 minutes to develop flavors.
  • Carefully remove bones and skin from broth. Strain broth through fine-mesh strainer; discard strainer contents. Skim fat from broth. Use broth and chicken immediately, or cover and refrigerate broth and chicken in separate containers up to 24 hours or freeze up to 6 months.
