SAVORY ROASTED BABY CARROTS

These salty little morsels are better than french fries, IMHO. You can go a little heavier on any of the seasonings, to taste, sometimes I even add a touch of cayenne for those who like a *kick*-

Time 35m

Yield 4 serving(s)

Number Of Ingredients 6

1 (16 ounce) bag baby carrots
3 teaspoons olive oil
1/4 teaspoon coriander
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Toss the carrots with the olive oil, thoroughly coating all the carrots. Spread in a single layer on a baking sheet (I like to line mine with foil, makes for easy cleanup). Bake at 450 degrees Fahrenheit for 30 minutes, stirring them around every 10 minutes. The carrots will become browned and caramelized, and the littlest ones may get quite brown, I have found they are just as delicious (maybe the most delicious) and leave them alone :) After they are roasted, sprinkle with the seasonings, and toss together to distribute the seasonings evenly throughout.

SAVORY ROASTED ROOT VEGETABLES

Beets were my sworn enemy until I tried them like this, it's a great way to use root vegetables. I think the beets add a beautiful red color to the dish, but if it bothers you to serve pinkish vegetables, substitute parsnips, rutabaga, or any similar vegetable; be creative!

Time 1h15m

Yield 6

Number Of Ingredients 11

1 cup diced, raw beet
4 carrots, diced
1 onion, diced
2 cups diced potatoes
4 cloves garlic, minced
¼ cup canned garbanzo beans (chickpeas), drained
2 tablespoons olive oil
1 tablespoon dried thyme leaves
salt and pepper to taste
⅓ cup dry white wine
1 cup torn beet greens

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the beet, carrot, onion, potatoes, garlic, and garbanzo beans into a 9x13 inch baking dish. Drizzle with the olive oil, then season with thyme, salt, and pepper. Mix well.
  • Bake, uncovered, in the preheated oven for 30 minutes, stirring once midway through baking. Remove the baking dish from the oven, and stir in the wine. Return to the oven, and bake until the wine has mostly evaporated and the vegetables are tender, about 15 minutes more. Stir in the beet greens, allowing them to wilt from the heat of the vegetables. Season to taste with salt and pepper before serving.

Tips:

  • Choose the right carrots: Look for carrots that are firm and have a deep orange color. Avoid carrots that are limp or have blemishes.
  • Cut the carrots evenly: This will help them cook evenly. Cut the carrots into 1-inch pieces or use a mandoline to slice them into thin strips.
  • Roast the carrots at a high temperature: This will help them caramelize and develop a delicious flavor. Roast the carrots at 425 degrees Fahrenheit for 20-25 minutes, or until they are tender and slightly browned.
  • Add some herbs and spices: This will help to enhance the flavor of the carrots. Some good options include rosemary, thyme, garlic powder, and onion powder.
  • Don't overcrowd the pan: Make sure to spread the carrots out in a single layer on the baking sheet. If you overcrowd the pan, the carrots will not cook evenly.
  • Serve the carrots immediately: Roasted carrots are best served hot out of the oven. You can garnish them with fresh herbs or a squeeze of lemon juice.

Conclusion:

Savory roasted carrots with mushrooms is a delicious and easy side dish that can be enjoyed by people of all ages. This dish is perfect for a weeknight meal or a special occasion. The carrots are roasted until they are tender and slightly caramelized, and the mushrooms add a savory flavor. This dish is also a good source of vitamins and minerals, making it a healthy choice for your family.
