SEAFOOD PIZZA

Seafood Pizza image

This was created to mimic the wonderful seafood pizza we used to enjoy at Pizzeria Uno in Cincinnati Ohio. It's especially easy with a boboli crust but making your own crust may taste better. I recommend using the fake crab rather than canned, but fresh crab would be best. It's rich and delicious. I love to dip it in cocktail sauce. YUMMY!!

Time 2h20m

Yield 4 to 6 servings

Number Of Ingredients 15

Marinara sauce
Grated cheese (cheddar, mozzarella, jack)
Red pepper, julienned
Caramelized onions
Blanched broccoli florets
Mushrooms
Shredded carrots
Or use your favorite vegetable
Basic pizza dough, recipe follows
1 teaspoon sugar
3/4 cup warm (110 F degrees) water
1 package dry yeast
2 1/2 cups flour
1/2 teaspoon salt
1 tablespoon olive oil

Steps:

  • Add toppings to pizza dough and bake in the lowest part of the oven for approximately 15 to 20 minutes or until dough is cooked through and golden.
  • In a measuring cup, combine water and sugar. Dissolve dry yeast in warm water mixture. Set aside for about 5 minutes, allowing yeast to become active.
  • In a large mixing bowl, combine 2 cups of flour and salt. Make a depression in the flour mixture and add oil and foamy yeast mixture. Mix dough ingredients until they stay together. (Alternatively, place dry ingredients in the bowl of a food processor and pulse a few times. Add oil and yeast mixture and pulse again until dough begins to form a ball.) Turn out onto a floured surface and knead for 8 to 10 minutes. If the dough appears wet or sticky, add flour, a little at a time, to achieve a smooth consistency.
  • Oil the inside of a clean dry bowl. Place the ball of dough in the bowl and roll it around so that it is covered with a layer of oil. Cover the dough with a towel and allow it to rise for about 1 1/2 hours in a warm area free of drafts.
  • Preheat oven to 450 degrees F as you begin to roll out dough.
  • After the dough has risen, punch it down and place on a floured surface. Roll out or press out to desired shape and place on hot stone or baking sheet.

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 14

3/4 pound medium shrimp, deveined with tails removed
1/2 teaspoon oregano
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
3 tablespoons all-purpose flour, plus more for rolling dough
2 cloves garlic, grated
1 1/2 cups milk
1/2 cup grated Parmesan
1 pound frozen pizza dough, thawed
All-purpose flour, for dusting
1 cup deli mozzarella (part-skim, low-moisture), grated
Red pepper flakes, for sprinkling
3 tablespoons chopped fresh parsley

Steps:

  • Preheat a grill pan over medium-high heat.
  • Sprinkle the shrimp in a bowl with the oregano, 1 tablespoon olive oil, 1/2 teaspoon salt and a pinch of pepper.
  • Heat a skillet over medium-high heat, then add the butter and let melt. Add the flour and cook, 1 minute. Add the garlic and continue to cook, whisking, 1 minute more. Whisk in the milk and cook until very thick, 2 to 3 minutes. Stir in 1/4 cup Parmesan and remove from the heat. Season with a pinch of salt and pepper.
  • Preheat the broiler to high.
  • Roll out the pizza dough on a lightly-floured work surface into two 10-inch ovals. Brush the grill pan with the remaining tablespoon olive oil. Grill the dough on both sides until there are grill marks, 2 to 3 minutes per side. Remove the crusts to a sheet tray. Add the shrimp to the grill pan and grill on both sides until fully cooked, pink and opaque, about 4 minutes total. Spread the white sauce on the dough in an even layer. Scatter the shrimp over the sauce. Sprinkle with the mozzarella and the remaining 1/4 cup Parmesan. Place under the broiler until the cheese is melted and bubbly, keeping a close eye so it doesn't burn, 2 to 7 minutes. Sprinkle the red pepper flakes and parsley on top before serving.

SAVORY BUTTER CHICKEN PIZZA

Savory Butter Chicken Pizza image

Marinated chicken thighs are simmered in a homemade butter sauce and baked atop naan for a "pizza" version of the favorite Indian dish.

Provided by Cooking in the Comments

Categories     Chicken Pizza

Time 1h35m

Yield 12

Number Of Ingredients 29

3 ½ pounds boneless, skinless chicken thighs
1 cup plain Greek yogurt
2 tablespoons ginger paste
2 tablespoons garlic paste
1 tablespoon garam masala
2 teaspoons ground cumin
2 teaspoons ground turmeric
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon lemon juice
5 tablespoons unsalted butter
2 medium onions, sliced
2 (14.5 ounce) cans crushed tomatoes
½ cup chicken stock
2 tablespoons ginger paste
2 tablespoons garlic paste
1 tablespoon ground cumin
2 teaspoons chili powder
2 teaspoons ground fenugreek
1 ½ teaspoons ground coriander
1 teaspoon salt
¼ jalapeno pepper, sliced
1 ½ cups heavy cream
1 tablespoon garam masala
2 (9 inch) naan breads
1 tablespoon olive oil, or as needed
8 ounces paneer, grated
¼ jalapeno pepper, sliced, or to taste
2 tablespoons chopped fresh cilantro, or to taste

Steps:

  • Cut chicken into bite-sized pieces. Combine yogurt, ginger paste, garlic paste, garam masala, cumin, turmeric, chili powder, salt, and lemon juice for marinade in a large glass or ceramic bowl. Mix ingredients together, then add chicken and toss to combine. Cover the bowl and refrigerate for at least 30 minutes, or up to 24 hours.
  • Heat butter for sauce in a saucepan over medium-high heat. Add sliced onions and cook until translucent, about 5 minutes. Add tomatoes, chicken stock, ginger paste, garlic paste, cumin, chili powder, fenugreek, coriander, salt, and jalapeno. Stir in heavy cream and garam masala. Reduce heat and let simmer.
  • Meanwhile, remove chicken from marinade and cook in a grill pan over medium-high heat until about 75% done, 3 to 5 minutes, flipping halfway though.
  • Use an immersion blender or electric blender to puree the sauce to desired consistency. Add chicken to the sauce and continue to simmer until chicken is cooked through and flavors have melded, about 10 more minutes.
  • While sauce simmers, preheat the oven to 350 degrees F (175 degrees C). Drizzle naan breads with olive oil.
  • Bake naan in the preheated oven for 15 minutes.
  • While naan is baking, remove sauce from heat and let cool to room temperature.
  • Remove naan from the oven and cover with a layer of butter sauce. Top with some of the paneer and jalapenos; add chunks of butter chicken, cilantro, and more paneer cheese. Reserve remaining paneer for topping after baking.
  • Return to the oven and bake for 10 minutes. Remove and sprinkle with remaining paneer and cilantro. Serve.

SEAFOOD PIZZA

Seafood Pizza image

Bored with the same old "cardboard" pizza? Well, you'll enjoy making this herbed shrimp and scallop treat.

Provided by By Betty Crocker Kitchens

Categories     Entree

Time 2h50m

Yield 4

Number Of Ingredients 15

1 package regular active dry yeast
1/2 cup warm water (105°F to 115°F)
1 1/4 to 1 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon sugar
12 uncooked medium fresh shrimp, in shells
1 cup pizza sauce
1 cup shredded mozzarella cheese (4 oz)
1/2 cup shredded provolone cheese (2 oz)
8 anchovy fillets in oil
1/2 lb bay scallops
1/2 cup chopped fresh basil leaves
1/2 teaspoon pepper
4 cloves garlic, finely chopped

Steps:

  • In large bowl, dissolve yeast in warm water. Stir in half of the flour, the oil, salt and sugar. Stir in enough remaining flour to make dough easy enough to handle.
  • Turn dough onto lightly floured surface; knead about 10 minutes or until smooth and elastic. Place dough in large bowl greased with shortening, turning dough to grease all sides. Cover and let rise in warm place 20 minutes.
  • Gently push fist into dough to deflate. Cover and refrigerate at least 2 hours but no longer than 48 hours, deflating dough occasionally.
  • Move oven rack to lowest position. Heat oven to 500°F. On lightly floured surface, press or roll dough into 12-inch round. Place on ungreased pizza screen or in 12-inch perforated pizza pan. Press dough from center to edge so edge is thicker than center.
  • Peel shrimp, leaving tails intact. Spread pizza sauce over dough to within 1/2 inch of edge. Sprinkle cheeses over sauce. Arrange shrimp, anchovies and scallops on cheeses. Sprinkle basil, pepper and garlic over seafood. Bake about 10 minutes or until shrimp are pink and firm, scallops are white and cheeses are melted.

Tips:

  • Use fresh seafood: The fresher the seafood, the better your pizza will taste. If you can, buy seafood that was caught the same day.
  • Cook the seafood properly: Seafood should be cooked through, but not overcooked. Overcooked seafood will be tough and chewy.
  • Use a variety of toppings: Don't just stick to one or two toppings. Get creative and use a variety of toppings to create a delicious and unique pizza.
  • Use a good quality cheese: The cheese is one of the most important ingredients in a pizza. Use a good quality cheese that melts well and has a good flavor.
  • Don't overload the pizza: Don't pile on too many toppings. This will make the pizza soggy and difficult to cook.
  • Bake the pizza at a high temperature: Pizza should be baked at a high temperature so that the crust is crispy and the toppings are cooked through.

Conclusion:

Seafood pizza is a delicious and versatile dish that can be enjoyed by people of all ages. With a little creativity, you can create a seafood pizza that is sure to impress your friends and family. So next time you're looking for a quick and easy meal, give seafood pizza a try.
