1/4 pound sliced smoked salmon
12 eggs
1/2 cup heavy cream
Salt and freshly ground black pepper
2 tablespoons butter
12 to 15 blades of fresh chives, finely chopped

Steps:

  • Reserve 2 slices of salmon for garnish. Chop the remaining salmon into very small pieces.
  • Whisk your eggs and cream together. Add 1/2 of your chopped chives and season eggs with salt and pepper. Preheat a large nonstick skillet over medium heat. Melt butter in the pan and add eggs. Scramble eggs with a wooden spoon. Do not cook eggs until dry. When eggs have come together but remain wet, stir in chopped salmon. Remove pan from the stove and place on a trivet. Garnish the eggs with remaining salmon and chives and serve right out of the warm pan.
  • Note: If you are serving these eggs with the other recipes provided as a brunch, a platter of store bought fruit filled dainties will complete your elegant brunch. Allow 1 dainty per person but halve dainties so that guests may mix and match varieties.

SOFT SCRAMBLED EGGS WITH SMOKED SALMON AND AVOCADO

Categories     Egg     Breakfast     Salmon     Avocado

Yield serves 4

Number Of Ingredients 7

8 eggs
3 tablespoons heavy cream
2 tablespoons unsalted butter
Freshly ground black pepper and sea salt
2 avocados, peeled and cut in slices
8 slices smoked salmon
Chopped chives (optional)

Steps:

  • Crack the eggs into a bowl. Add the cream and whisk until the eggs look foamy and light. Heat a 10-inch nonstick skillet over medium heat. Melt the butter until it foams; then turn the heat down to low and slowly pour in the eggs. Using a heat-resistant rubber spatula, slowly stir the eggs from the outside of the pan to the center. Once the eggs begin to set, stirring slowly will create large, cloudlike curds. This process takes about 10 minutes. It sounds easy, but perfect scrambled eggs that are soft and custardlike with no brown color are the sign of a really good cook. Season the eggs with a few cranks of black pepper and good salt, like fleur de sel. I like serving these with a few slices of avocado and smoked salmon, maybe a little chopped fresh chives. Once you perfect these, you'll never order eggs at a diner again.

Time 10m

Yield 4 serving(s)

Number Of Ingredients 6

4 large eggs
4 large egg whites
fresh ground pepper, to taste
1 teaspoon canola oil
2 scallions, green tops only, thinly sliced (green onions)
1 ounce smoked salmon, thinly sliced

Steps:

  • Whisk eggs, egg whites and pepper in a small bowl until well blended.
  • Heat oil in a nonstick skillet over medium-low heat. Add onion greens and cook, stirring, until softened, about 30 seconds.
  • Pour the eggs into the pan and cook until they just begin to set, about 10 seconds; stir in salmon. Cook, stirring gently from time to time, until the eggs have thickened into soft, creamy curds, 3 to 5 minutes.
  • Serve immediately.

Tips:

  • Use fresh eggs. Fresh eggs will produce fluffier and more flavorful scrambled eggs.
  • Beat the eggs well. Beating the eggs well will help to incorporate air and create a lighter texture.
  • Use a non-stick skillet. A non-stick skillet will help to prevent the eggs from sticking and will make it easier to clean up.
  • Cook the eggs over low heat. Cooking the eggs over low heat will help to prevent them from overcooking and becoming tough.
  • Stir the eggs constantly. Stirring the eggs constantly will help to prevent them from sticking to the pan and will also help to create a more even cook.
  • Do not overcook the eggs. Overcooked eggs will be tough and rubbery. Cook the eggs until they are just set, but still slightly runny in the center.
  • Season the eggs to taste. You can season the eggs with salt, pepper, herbs, or spices to taste.
  • Serve the eggs immediately. Scrambled eggs are best served immediately after they are cooked.

Conclusion:

Scrambled eggs with smoked salmon is a delicious and nutritious breakfast or brunch recipe. It is quick and easy to make, and it is a great way to use up leftover smoked salmon. The eggs are fluffy and flavorful, and the smoked salmon adds a rich and savory flavor. This recipe is sure to please everyone at your table.
