This is a typical dish served in Cuba or Puerto Rico, each country has their own method of preparation. You can flavor this dish with meat, but I left it out as I serve it as a side dish with my meats. It is an easy and healthy short cut and takes about 30 minutes to cook.

SAZON RICE

Sazon Rice image

Goes great with Mexican food. I can't remember where I picked this recipe up, but originally I found it on the internet. Unfortunately, I didn't have the url on the printout I had laying around. Originally it called for 1 packet of Sazon seasoning, but I used dry Sazon instead. If you don't have that, you might try using some Mexican seasoning blend with perhaps a little bit of annato.

SAZON GOYA BEANS AND RICE - VEGAN

Sazon Goya Beans and Rice - Vegan image

A simple, healthy, easy and even affordable dinner. BTW: It also tastes pretty good. If you wish to avoid the Mono-sodium Glutamate found in Sazon Goya, then try the alternative mix here: http://www.food.com/recipe/sazon-the-dry-mix-404770. I like Sazon Goya slightly better, but that's probably for the same reason I don't want to eat it - MSG.

BLACK BEANS AND RICE

Black Beans and Rice image

Mmm, another quick and delicious meal. I like black beans because they're high in protein, but incredibly low in fat and calories, nice and filling without the worry. I actually got this recipe off of the back of a can and then messed with a little bit. Um, special tips for making this, I wouldn't add as much water as it says to add, I usually add about 3/4 of a cup to 1 cup of water, but it really depends on how much juice you want. If you think you've added too much you can just cook it longer. ****Also this recipe calls for 2 packets of Sazón Goya without Annatto, which you can find at any grocery store, usually in the aisle with Mexican food, but for some reason this site can't seem to understand. So. Good luck with that.****

Don’t have the required ingredients? No problem! Try these replacements:

  • • Use brown rice instead of white rice for a healthier option.
  • • If you don't have Sazon Goya, use a blend of cumin, oregano, and garlic powder instead
  • • If you don't have adobo, use a pinch of salt and pepper instead.
  • • Feel free to add other vegetables to your dish, such as bell peppers, onions, or carrots.
  • • Top your dish with a dollop of sour cream or guacamole for an extra layer of flavor.

Tips:

  • • To save time, cook your rice in a rice cooker.
  • • You can also cook your beans in a slow cooker. Just add all of the ingredients to the slow cooker and cook on low for 8-10 hours, or on high for 4-6 hours.
