Time 22m

Yield 4 servings

Number Of Ingredients 8

1 (16-ounce) package pre-cooked rosemary and garlic potatoes (recommended: Reeser's)
1/3 cup mayonnaise
1 teaspoon Dijon mustard
1 teaspoon balsamic vinegar
2 teaspoons dried tarragon, crushed
1 teaspoon crushed garlic
2 scallions, finely chopped
1/4 cup real bacon pieces

Steps:

  • Place the potatoes in a microwave-safe bowl, cover and cook on high for 5 to 7 minutes.
  • In a medium bowl, combine remaining ingredients. Add cooked potatoes and toss to combine. Serve warm.
  • NOTE: If not planning to serve immediately, refrigerate and chill thoroughly (can be served cold).

Tips:

  • Use high-quality potatoes: Yukon Gold or red potatoes are good choices for potato salad because they hold their shape well when cooked.
  • Cook the potatoes until they are tender but not mushy: You can test the potatoes by piercing them with a fork. If the fork goes through easily, the potatoes are done.
  • Let the potatoes cool slightly before adding the other ingredients: This will help to prevent the potato salad from becoming too watery.
  • Use a variety of ingredients in your potato salad: This will make the salad more flavorful and interesting. Some good additions include diced celery, chopped red onion, hard-boiled eggs, and crumbled bacon.
  • Dress the potato salad with a flavorful dressing: A simple vinaigrette or mayonnaise-based dressing is a good choice. You can also add some herbs, spices, or mustard to the dressing for extra flavor.
  • Chill the potato salad before serving: This will help to firm up the potatoes and make the salad more refreshing.

Conclusion:

Scallion and bacon potato salad is a classic side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make the best scallion and bacon potato salad that everyone will love.
