3/4 cup freshly squeezed lime juice, divided (5 limes)

1/2 cup halved and thinly sliced shallots (2 shallots)
3 tablespoons diagonally sliced scallions, white and green parts
1/2 Hass avocado, 3/4-inch diced
1/2 cup Holland red bell pepper, 1/2 to 3/4-inch diced
1/4 cup roughly chopped fresh parsley
1 1/2 tablespoons minced jalapeno pepper
1 1/2 teaspoons minced garlic (2 cloves)
Good olive oil
1/4 teaspoon Sriracha
Bibb lettuce leaves, for serving

Steps:

  • In a medium bowl, combine the scallops, 1/2 cup of the lime juice, and 1 teaspoon salt and set aside at room temperature for exactly 1 hour, stirring occasionally.
  • In a separate bowl, combine the cucumbers, shallots, scallions, avocado, bell pepper, parsley, jalapeno pepper, and garlic. In a glass measuring cup, whisk together the remaining 1/4 cup lime juice, 1/4 cup olive oil, 1 teaspoon salt, 1/2 teaspoon pepper, and the Sriracha. Pour over the vegetables and combine.
  • When ready to serve, lift the scallops out of the lime juice with a slotted spoon (discard the liquid) and add them to the vegetable mixture. Stir well and spoon into the lettuce leaves for serving.

1 cup fresh Seville orange juice (or 1/2 cup regular fresh orange juice plus 1/2 cup fresh lime juice)
1 tablespoon bottled ají amarillo chile purée (often labeled "crema")
1/4 cup finely chopped red onion
1/2 pound cleaned squid
1/2 pound sea scallops, tough ligament removed and scallops halved horizontally
1/2 pound large shrimp in shell (21 to 25 per pound), peeled and deveined
1/4 cup chopped cilantro

Steps:

  • Whisk together juice, chile purée, onion, and 1 1/2 teaspoons salt in a large bowl for marinade.
  • Halve squid tentacles lengthwise and cut bodies (including flaps, if attached) crosswise into 1/4-inch rings.
  • Poach scallops and shrimp in a medium pot of barely simmering water, stirring occasionally, until barely cooked through, about 1 minute. Stir in squid and cook, stirring occasionally, until just tender, about 40 seconds.

1 pound bay scallops (about 2 cups)
1 tablespoon extra-virgin olive oil
1 avocado, peeled, pitted, and cut into 1/2-inch pieces
1/2 cup fresh cilantro leaves
Coarse salt and freshly ground pepper

Steps:

  • Slice the ends off the limes, and stand on end. Use a paring knife to remove the peel and pith, following the curve of the fruit. Remove sections from membranes, and collect sections and juices in a small bowl. Cut sections into 1/2-inch pieces.
  • Place scallops, olive oil, lime juice, hearts of palm, and lime pieces in a bowl, and toss to combine. Cover with plastic wrap, and place in the refrigerator for at least 2 hours or overnight.
  • Just before serving, add avocado and cilantro to ceviche, and season with salt and freshly ground pepper. Fill scallop shells with 1 heaping tablespoon ceviche, and serve on a tray lined with coarse salt.

1 teaspoon sea salt
1/3 cup minced red onion
1 clove garlic, minced

1/4 pound scallops
1/4 pound small to medium sized shrimp, peeled and deveined
1/3 to 1/2 cup lime juice, plus 2 tablespoons (about 7 to 10 limes for 1/2 cup)
2 tablespoons fresh lemon juice (about 2 medium lemons)
1/2 cup coconut milk
2 tablespoons olive oil
1 jalapeno, halved and seeded
1 tablespoon chopped cilantro
1 clove garlic, peeled
1 mango, peeled, pitted and diced
1/2 small red onion, thinly sliced
1/2 teaspoon salt (or lime salt)
1 tablespoon unsweetened coconut for garnish
1 coconut shell halved, optional

Steps:

  • Cook's Note: If the scallops are particularly thick, you may want to slice each scallop horizontally into 2 thinner disks.
  • Cut each scallop into 8 wedges. Cut the peeled shrimp into chunks that approximately match the size of the scallop wedges (unless you have rock shrimp, which doesn't need to be cut). In a medium bowl, pour enough lime juice over the scallop and shrimp pieces to cover. Toss gently so each piece is given a good lime juice bath. Cover the bowl with plastic wrap and place the bowl in the refrigerator to marinate for 4 to 10 hours. The shellfish is done when it's completely white and opaque and doesn't look or taste raw.
  • In a separate bowl, mix the remaining lime juice with the lemon juice, coconut milk, and olive oil. You can chop the jalapeno, cilantro, and garlic by hand, but if you have a food processor it's much easier to pulse the 3 together. Add the pepper mixture to the coconut mixture, and stir in the red onion. (You may add the mango chunks here if you like, but I prefer to add them right before serving.) Season the mixture with the salt and mix well. Cover the bowl with plastic wrap and refrigerate for several hours or overnight.
  • When every chunk of shrimp and scallop is white with no hint of translucence, remove them from the juice. Discard the lime juice. Combine the seafood and the coconut milk mixture, tossing well. Add the mango chunks and gently toss together. Taste the seafood and add more salt or fresh lime juice, if desired.
  • For a knockout presentation, spoon the seafood ceviche into the coconut shell halves and top with a sprinkle of unsweetened coconut, if desired. Pile warm tortilla chips around the coconut shells, if desired.

1 1/2 pounds sea scallops (preferably dry-packed)
2 tablespoons minced seeded jalapeno pepper
1 cup Mojito Marinade (see below)
2 tablespoons finely diced red bell pepper
1 lime, cut into 8 wedges
1/4 cup chopped garlic
1/2 cup chopped onion
2 cups fresh orange juice
1/2 cup fresh lime juice
1/2 cup olive oil
4 teaspoons kosher salt
1 tablespoon black pepper
2 teaspoons ground cumin
2 teaspoons dried oregano
1 tablespoon chopped fresh cilantro

Steps:

  • Plop the scallops into a glass or stainless steel bowl. Combine the jalapenos and the Mojito Marinade and pour over the scallops. Marinate for 1 to 2 hours in the fridge.
  • Fire up the grill; then get back inside and fish the scallops out of the marinade. Dry them off really well, and string them onto skewers (if you're using bamboo skewers, soak them in water for 10 minutes before skewering). Pour the marinade into a small saucepan and bring it to a rapid boil. Toss in the red peppers, turn the heat to low, and simmer for 2 minutes. Keep warm
  • Grill the scallops over the hot coals for about 2 minutes on each side, or till the edges are tinged with a rich brown color and the flesh turns opaque.
  • Ring a plate with lime wedges. Slide the scallops off the skewers and pile them up in the center of the plate. Pour on the sauce and serve family style, with a bunch of toothpicks so everyone can dig in.
  • Mix together the garlic, onions, orange juice, and lime juice in a bowl. Heat the olive oil in a large saucepan till just smoking. Now cover up your arms and put some potholder mitts on your hands because you're about to do something that is contrary to good cooking practice but produces great flavor release. Slice the contents of the bowl into the hot oil--be very careful because the liquid will splatter. Simmer for 5 minutes to soften the onions and garlic. Season the marinade with the rest of the ingredients. Pour everything into a blender or food processor and pulse 3 times to combine. Pour into a plastic container and cool to room temperature; then cover and refrigerate. Mojito Marinade keeps for up to 2 weeks.

This dipping sauce, fresh with herbs and tangy with lime, is Blue Ginger's, Ming Tsai's restaurant, most requested recipe. It's based on the traditional Thai dip called cha-gio, which gets its flavor from fish sauce. That salty ingredient is nicely balanced with lime juice. The herbs darken as the sauce ages; this isn't a taste problem (quite the opposite, as the flavor deepends over time) but the sauce will lose it looks. If this bothers you make and store the sauce "base" only, then chop & add the herbs an hour before serving it.Ceviche is food "cooked" without heat. As with all ceviches, freshness is key. Make sure your scallops are pristine enough to eat raw. This technique uses citric acid or vinegar to firm and therefore"cooked". 1 1/2 pounds large sea scallops (about 20), tough ligament removed from side of each if attached
3 tablespoons extra-virgin olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 navel orange
2 tablespoons fresh lime juice
3/4 seedless cucumber (usually plastic-wrapped), halved lengthwise, cored, and thinly sliced (2 cups)
2 tablespoons thinly sliced shallot
1 to 2 teaspoons finely chopped fresh jalapeño chile, including seeds
1/4 cup chopped fresh cilantro

5 metal or wooden skewers (if using wooden, soak in water 30 minutes)

Steps:

  • Toss scallops with 1 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a bowl, then thread 4 scallops onto each skewer.
  • Prepare grill for direct-heat cooking over high heat.

2 pounds ripe heirloom tomatoes, thinly sliced
3 medium garlic cloves, minced or pressed
1 ripe avocado, sliced
1 lime, cut in wedges
1 1/2 pounds bay scallops, tendons removed
1/4 cup freshly squeezed lime juice
2 tablespoons minced fresh cilantro leaves
1 large jalapeno pepper, seeded and diced
1/2 small red onion, minced
Sea salt

Steps:

  • At least one hour before serving, place the scallops, lime juice, cilantro, jalapeno, red onion, and salt and pepper as desired in a medium bowl. Stir to combine ingredients. Cover and refrigerate for 1 hour or up to 12 hours.
  • On a large serving platter, place large lettuce leaves overlapping each other in a circle so the frilly edges extend just beyond the rim of the platter. Using a slotted spoon to leave juices behind, mound ceviche in the center.

1 pound sea scallops
1 tablespoon olive oil
1 cup fresh ginger, peeled and chopped
1/4 cup garlic cloves, peeled
1 stalk lemongrass, chopped
1 1/4 cups coconut water
1 1/4 cups coconut milk
1/2 cup fresh lime juice
1 jalapeño, seeded and minced
1/4 cup chives, finely chopped
1 small red onion, finely chopped
1/4 cup seeded and finely chopped tomato
Freshly ground black pepper
Ginger juice, grated from 1 large piece ginger, to taste
3 tablespoons dried coconut, toasted, for garnish

Steps:

  • Bring a large pot of water to a boil. Salt the water and boil scallops for 2 minutes. Using a slotted spoon, transfer them to an ice bath to cool. Thinly slice each into 3 or 4 pieces and refrigerate.
  • Set a medium saucepan over medium-high heat and add the oil. When hot, add the ginger, garlic and lemongrass and sauté for 5 minutes. Pour in the coconut water and coconut milk, bring to a boil and simmer until aromatic, about 10 minutes. Cool to room temperature, then chill in the refrigerator. Strain the liquid;discard the solids.
  • In a mixing bowl, combine the scallops, lime juice, cooled coconut liquid, jalapeño, chives, red onion and tomato. Season to taste with salt, pepper and ginger juice. Sprinkle with toasted coconut.

Delicious and easy ceviche. Always a crowd-pleaser! You can also serve it with tortilla chips as a dip. The action of the acid in the lime juice cooks the scallops, firming the flesh and turning it opaque.

1 poblano chile pepper, halved lengthwise and seeded
1 serrano chile pepper, halved lengthwise and seeded
1 pound small bay scallops
½ cup fresh lime juice
4 tomatoes, diced, or more to taste
1 red onion, chopped
½ bunch fresh cilantro, chopped
salt and ground black pepper to taste

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
  • Place poblano and serrano chile peppers cut-side down on the lined baking sheet.
  • Roast under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and tightly seal with plastic wrap. Allow peppers to steam as they cool, about 20 minutes. Remove and discard skins. Finely chop the flesh.
  • Bring a large pot of water to a boil. Add scallops; cook for 1 minute. Drain and transfer to a glass or ceramic bowl.
  • Pour lime juice over the scallops. Stir in roasted peppers, tomatoes, onion, cilantro, salt, and black pepper. Cover with plastic wrap and refrigerate ceviche until flavors combine and scallops are opaque, about 2 hours.
  • Spoon equal amounts of ceviche into 6 martini or margarita glasses to serve.

1 pound small scallops
Juice of 3 limes
4 tablespoons finely chopped scallions
4 tablespoons chopped fresh coriander leaves
4 tablespoons chopped fresh mint
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh Italian parsley
1/2 fresh jalapeno pepper, seeded and finely minced (or to taste)
Salt and freshly ground black pepper to taste
3 ripe Haas avocados
Lettuce leaves

Steps:

  • Combine the scallops with the juice of two limes and allow to marinate at least eight hours.
  • Just before serving, drain any excess fluid from the scallops and add the scallions, coriander, mint, basil, parsley and jalapeno pepper. Season to taste with salt and pepper.
  • Cut each avocado in half and remove the pits. Brush the flesh with the remaining lime juice. Fill the cavity of each avocado with some of the ceviche. Place a filled avocado half on lettuce leaves and serve.

3/4 lb. Uncooked Deveined Shrimp, tails pulled, cut in half the short way
3/4 lb. Uncooked Scallops, cut into quarters
1/2 c. Fresh Squeezed Lime Juice
1/4 tsp. Sea Salt
Fresh Ground Pepper
3/4 lb. Tomatoes, seeded* and diced (varicolored heirlooms work beautifully)
1/4 lb. Sweet Onion (Vidalia, Walla Walla ), diced small
1 Jalapeño Peppers, seeded and minced OR
2 small Serrano Peppers, minced (these will be spicier than the jalapeño)
1 Garlic Clove, minced
1/4 c. Parsley, chopped
1/4 c. Cilantro, chopped
Avocado Crema
1 large or 2 small avocadoes
1/4 c. Lemon or Lime Juice
1/4 tsp. Sea Salt

Steps:

  • Place first five ingredients in a glass or ceramic bowl (metal will react with the acidity of the lime). Refrigerate at least 16 hours, turning shrimp and scallops once or twice during that time to evenly distribute marinade. Before serving, prepare the remaining ingredients in a separate bowl. Mix thoroughly with marinated seafood and serve with a squeeze of avocado crema (see recipe below). *To seed a tomato, cut it in half crosswise, then gently squeeze each half, twisting your hand in a clockwise/ counterclockwise motion. Remove avocadoes from their skins, discarding pits. Place avocadoes into a blender. Add the lemon/lime juice and sea salt. Whir mixture until puréed, stopping the blender if necessary to rearrange contents for a complete purée. Place ceviche in individual chilled wine goblets or glass bowls. Squeeze a dollop of crema over each serving using a pastry bag, or fill a plastic bag with avocado crema, snip a corner tip of the bag, and use as you would a pastry bag.

4 tablespoons fresh orange juice
4 tablespoons fresh lemon juice
4 tablespoons fresh lime juice
1/4 bunch cilantro, washed, dried, and chopped, plus 20 leaves for decoration
1 red onion, peeled and sliced
4 tablespoons ketchup
1 jalapeno chile, seeded and chopped
Dash hot red pepper sauce
Salt and fresh ground black pepper
1 vine ripe tomato, peeled, seeded, and uniformly small diced
20 small pieces sea beans, see Cook's Note, blanched in boiling water and refreshed in ice water
2 tablespoons extra-virgin olive oil
1 teaspoon fresh lemon juice
Sea salt and fresh ground pepper
20 live fresh, dry bay scallops, shucked (recommended: Taylor Bay scallops)

Steps:

  • In a non-corrosive bowl, mix together the marinade ingredients and refrigerate for at least 2 hours, preferably overnight.
  • In a medium-sized bowl, mix together the garnish ingredients and let it chill in the refrigerator.
  • Press marinade mixture through a fine sieve and discard solids, keep liquid well chilled. Add scallops to the liquid and allow to marinate for at least 1 hour, or until scallops appear slightly opaque. Arrange scallops back into their shells and top with garnish and cilantro leaves. Serve well chilled.

  • Blanch scallops for one minute in large pot of salted water. Remove to a shallow dish. 2. Add red onion, lime nad orange juices, chives S&P 2. refrigerte 2-3 hours, srtirring once ortwice before serving add remaining indgredients. Serve on lettuce with orange slices
