MAD APPLES SCALLOPED POTATOES
I cut this recipe out of a magazine more than a dozen yers ago and finally decided to post it here so I don't lose it. The restaurant 'Mad Apples' is sadly no longer in business and if the rest of their food was as good as this simple dish it is a great loss. Please note: This is NOT diet fare :) Oh, and the recipe is posted exactly as written in the magazine. I like to add very thinly sliced onion to the mix.

Tips for Making the Best Scalloped Apples:
- Choose the Right Apples: Select firm, tart apples that hold their shape well when cooked, such as Granny Smith, Honeycrisp, or Braeburn.
- Slice the Apples Thinly: Use a mandoline or a sharp knife to slice the apples thinly and evenly. This will ensure that they cook evenly and have a nice texture.
- Use Fresh Spices: Freshly grated nutmeg and cinnamon add a warm, aromatic flavor to the apples. If you don't have fresh spices, you can use ground spices, but be sure to use half the amount.
- Don't Overcook the Apples: The apples should be tender but still hold their shape. Overcooking will make them mushy.
- Serve Warm or Cold: Scalloped apples can be served warm from the oven or chilled. They are also delicious the next day.
Conclusion:
Scalloped apples are a classic dessert that is easy to make and always a crowd-pleaser. With their sweet and tangy flavor and tender texture, they are a perfect way to end a meal. Whether you serve them warm from the oven or chilled, scalloped apples are sure to be a hit. So next time you are looking for a simple and delicious dessert, give this recipe a try.
