2 tablespoons all purpose flour
3 cups whole milk
1 cup whipping cream
10 ounces soft fresh goat cheese (such as Montrachet), crumbled
1/3 cup plus 2 tablespoons freshly grated Parmesan cheese

Paprika

1 Tbsp fresh parsley, minced

  • 3. In large nonstick skillet over medium heat, heat oil.
  • 4. Add mushrooms; saute over high heat until tender and liquid has evaporated; set aside.
  • 5. In small bowl combine flour, salt and pepper.
  • 6. Coat shallow 1 1/2-quart baking dish with vegetable cooking spray and cover bottom with a layer of potatoes; sprinkle with a little of the flour mixture.

  • 9. Repeat layers until all ingredients are used, ending with butter; pour milk over.
  • 10. Bake 30 minutes until potatoes are tender and top is browned.
  • 11. Sprinkle with parsley.

Tips:

  • Choose the Right Potatoes: Yukon Gold or Russet potatoes are ideal for scalloped potatoes due to their creamy texture and ability to hold their shape when cooked.
  • Slice Potatoes Thinly: Evenly sliced potatoes ensure they cook evenly throughout the dish.
  • Use Fresh Mushrooms: Fresh mushrooms provide a more intense flavor compared to canned or dried ones.
  • Sauté Mushrooms: Sautéing mushrooms in butter enhances their flavor and adds a golden brown color.
  • Use a Variety of Cheese: Combining different types of cheese, such as cheddar, Parmesan, and Gruyère, creates a rich and complex flavor profile.
  • Layer Ingredients Properly: Start and end with a layer of potatoes to prevent the cheese from burning. Alternate layers of potatoes, mushrooms, and cheese for even distribution.
  • Season Each Layer: Season each layer of potatoes and mushrooms with salt, pepper, and garlic powder for added flavor.
  • Bake Until Golden Brown: Bake the scalloped potatoes until the top is golden brown and the potatoes are tender when pierced with a fork.
  • Let it Rest: Allow the scalloped potatoes to rest for a few minutes before serving to allow the flavors to meld together.
  • Garnish Before Serving: Sprinkle chopped fresh parsley or chives on top of the scalloped potatoes for a pop of color and freshness.
