Tips for Making Scalloped Yams and Apples

  • Choose the right yams. Look for yams that are firm and have smooth, unblemished skin. Avoid yams that are soft or have any signs of bruising.
  • Peel the yams carefully. Use a sharp knife to peel the yams, being careful not to cut into the flesh. You can also use a vegetable peeler.
  • Slice the yams thinly. The thinner the yams are sliced, the more evenly they will cook. Aim for slices that are about 1/4-inch thick.
  • Use a variety of apples. For the best flavor, use a combination of tart and sweet apples. Some good choices include Granny Smith, Honeycrisp, and Braeburn.
  • Peel and core the apples. Use a sharp knife to peel and core the apples. You can also use an apple corer.
  • Slice the apples thinly. The apples should be sliced about the same thickness as the yams.
  • Layer the yams and apples in a baking dish. Start by layering the yams in the bottom of the dish. Then, add a layer of apples. Repeat this process until all of the yams and apples have been used.
  • Season the yams and apples. Sprinkle the yams and apples with salt, pepper, and nutmeg. You can also add other spices, such as cinnamon or ginger.
  • Pour the cream over the yams and apples. Pour the cream over the yams and apples, making sure to evenly coat them.
  • Bake the scalloped yams and apples. Bake the scalloped yams and apples in a preheated oven at 350 degrees Fahrenheit for 45-50 minutes, or until the yams are tender and the apples are soft.
