2 tablespoons fresh lemon juice, plus lemon wedges for garnish
1/2 cup dry white wine
1/4 cup torn fresh basil
2 tablespoons chopped fresh parsley

Steps:

Return the shrimp to the pan, then add the basil and the remaining 2 tablespoons butter; season with salt and pepper.
  • Drain the pasta and transfer to a large serving bowl. Toss with the shrimp, scallops and sauce; garnish with parsley and lemon.

Scrumptious Shrimp Scampi Linguine image

I've been buying a well known frozen dinner bag that's absolutely fantastic, but rather expensive. So I checked the ingredients, searched scampi recipes online, and decided to create my own by adding, subtracting, and tweaking all of them. This is my first!!

Time 1h

Yield 6

Number Of Ingredients 16

1 (16 ounce) package linguine pasta
2 tablespoons butter
1 ½ tablespoons olive oil
½ cup chopped red bell pepper
½ cup chopped yellow bell pepper
6 cloves garlic, sliced
48 large shrimp - peeled, deveined, and tails removed
½ cup dry white wine (such as Chardonnay)
1 teaspoon lemon juice
¼ cup clam juice
2 tablespoons butter
1 ½ tablespoons olive oil
2 tablespoons heavy cream
1 ½ teaspoons crushed red pepper flakes, or to taste
3 tablespoons chopped fresh parsley
1 teaspoon sea salt

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Reserve 1 cup of the linguine cooking water, and drain pasta well in a colander set in the sink.
  • Melt 2 tablespoons of butter and 1 1/2 tablespoon of olive oil together in a large skillet over medium heat, and cook and stir the red and yellow bell pepper and garlic until the peppers have softened, about 10 minutes. Stir in the shrimp, and cook and stir until the shrimp are opaque and pink, about 5 minutes. Remove the shrimp to a bowl and set aside, leaving the peppers and garlic in the skillet.
  • Stir the wine, lemon juice, and clam juice into the skillet, and bring to a boil over medium heat. Mix in 2 more tablespoons of butter and 1 1/2 tablespoons of olive oil, and return the shrimp to the skillet. Stir in reserved pasta cooking water, cream, red pepper flakes, parsley, and sea salt. Add the cooked linguine, and toss lightly with the shrimp and sauce in the skillet. Simmer the mixture over medium-low heat for 5 minutes to let the pasta absorb some of the sauce, and serve hot.

Provided by Kylie Perrotti

Categories     Dinner

Time 40m

Number Of Ingredients 14

1 pound dry sea scallops (muscle removed)
¾ pound large shrimp (peeled and deveined, tail removed or left on depending on preference)
16 ounces dry linguine
4 tablespoons butter (divided)
2 teaspoons cooking oil (plus more, as needed)
2 shallots (peeled and finely diced)
1 fennel bulb (fronds reserved, bulb cored and finely diced)
4 cloves garlic (peeled and minced)
1 pint cocktail tomatoes (halved or quartered, depending on size)
1 red Fresno chili pepper (trimmed and minced)
½ cup dry white wine
½ cup reserved pasta cooking water
⅓ cup fresh parsley leaves (minced)
Salt and pepper to taste

Steps:

  • Remove the muscle from the scallops and sprinkle with salt. Put them on a plate and transfer to the refrigerator as you prepare the rest of the ingredients.
  • Peel and devein the shrimp and pat dry. Season with salt and pepper and transfer to the refrigerator.
  • Bring a large pot of salted water to a boil.
  • Once all of the ingredients have been chopped and diced, prepare the scallops to be sautéed. Heat 2 teaspoons oil in a wide pot over high heat.
  • Pat the scallops dry thoroughly once more. The dryer the better!
  • Melt 2 tablespoons butter into the wide pot. Once melted and frothy, add the scallops and don't move until a beautiful crust has formed, about 1 minute 30 seconds. Flip and cook an additional 30 seconds or so. The scallops should be slightly undercooked. Transfer to a plate.
  • Pat the shrimp dry once more. Add them to the pot and cook in an even layer for 2-3 minutes until almost cooked through. Transfer to the plate with scallops. Loosely tent with foil as you finish the sauce.
  • Right before beginning the sauce, add the linguine to the boiling water. Cook until al dente and reserve ½ cup pasta cooking water before draining the pasta.
  • Carefully wipe out the excess butter from the wide pot. Melt the remaining 2 tablespoons butter in the pot over medium heat. Once melted and frothy, add the finely diced shallot and fennel and cook for 4-5 minutes until softened.
  • Add the tomatoes and red Fresno pepper (or crushed red pepper) and season everything with salt and pepper. Cook for 3-4 minutes until the tomatoes begin to soften.
  • Turn the heat to high for 1 minute. Pour in the white wine and bring to a boil. Reduce heat to medium and boil the sauce for about 5-7 minutes until it reduces. Taste and season with salt and pepper.
  • Add the reserved pasta cooking water to the pot. Bring to a boil and cook for 3-4 minutes until reduced. Taste and season again to your preferences. Stir in the minced parsley.
  • Add the cooked linguine to the pot and toss to coat. Add the seafood and cook for 1-2 minutes more until the shrimp are opaque and the scallops are warmed through. Turn off the heat.
  • Divide the pasta and seafood between shallow bowls. Garnish with more parsley and fennel fronds. Enjoy!

  • Blend apricot mixture once more then add to skillet and stir until thickened and bubbly.

Tips:

  • Choose the freshest seafood possible. Look for scallops and shrimp that are firm and have a briny smell. Avoid any seafood that is slimy or has an off odor.
  • Cook the seafood properly. Scallops and shrimp cook quickly, so it's important not to overcook them. Overcooked seafood is tough and chewy.
  • Use a good quality pasta. Linguine is a great choice for this dish because it holds the sauce well. You can also use spaghetti or fettuccine.
  • Make sure the sauce is flavorful. The sauce is what really makes this dish special. Use a good quality white wine, and don't be afraid to add some fresh herbs and spices.
  • Serve the dish immediately. This dish is best served hot, so make sure to serve it as soon as it's finished cooking.

Conclusion:

This scrumptious scallops and shrimp with linguini is a delicious and easy-to-make seafood dish that is perfect for a quick and easy weeknight meal. The combination of scallops, shrimp, and linguini is a classic, and the white wine sauce is the perfect complement to the seafood. This dish is sure to be a hit with your family and friends.
